The cork is never removed, which helps prevent oxidation, increasing the longevity of the wine. It accomplishes this by first inserting a hollow needle through the cork. The user then presses a trigger to pressurize the bottle with argon gas. When the user releases the trigger, the wine pours into the glass. The main winery building, which is still in use, was completed in 1883. There have been vineyards at the Oakville site since the late 1800s.     Pinot elicits a cornucopia of descriptives Volume 9, Issue 30 September 30, 2013 Robert Stemmler: The “Unwilling Prince of Pinot” “Preserve to the utmost the natural character of the grapes; be first rate but not flamboyant; never compromise with anything.” Robert Stemmler Robert Stemmler grew up in the Baden-Württenberg wine region near Stuttgart, Germany during the rule of Adolf Hitler. He graduated from Bad Kreuznach Wine College and worked as a winemaker in various wine regions of Germany and acquired a reputation in Germany for uncompromising commitment to excellence, “Everything given to the wine, the stars of the show.” Stemmler was brought to Northern California in 1961 by brothers Robert and Peter Mondavi of Charles Krug Winery in Napa Valley to solve the problem of secondary fermentations in bottled wines. He was the winemaker at Charles Krug for seven years at a time when the Mondavi brothers began to take over their father’s winery. He consulted for several notable wineries including Inglenook, St. Clement and Raymond, and was hired at Simi in 1970 to reactivate the old Simi Winery in Healdsburg. In 1977, Stemmler opened his own eponymous winery in the Dry Creek Valley of Sonoma County in partnership with Trumbull Webb Kelly who was a former educator that managed the tasting room and retail sales. The tasting room at 3805 Lambert Bridge Road in Healdsburg first opened in 1985. I can remember visiting the original tasting room and Robert Stemmler was one of the first Pinot Noirs I cut my teeth on. Stemmler produced a variety of wines including Chardonnay, Sauvignon Blanc, Late Harvest Sauvignon Blanc, Cabernet Sauvignon and Pinot Noir and by 1986 production had reached 12,000 cases, including 3,000 to 5,000 cases of Pinot Noir.

    1997 PlumpJack Estate Cabernet Sauvignon VINEYARD... our 100% estate Cabernet Sauvignon is made entirely from the grapes grown in the vineyards adjacent to PlumpJack Winery located on Oakville Cross Road, Oakville AVA, Napa Valley HARVEST and HEALTH... this Cabernet was hand-harvested commencing on August 29th, 1997 and concluded September 9th, 1997 at an average of 24.2 degrees Brix, measurable acidity of .58 and pH of 3.52 for a total of 54 tons FERMENTATION... after a 12 hour cold soak, the fermentation was temperature-controlled using a moderate yeast and continued to dryness for a period of 7 days AGING... took place at PlumpJack Winery in a specially selected combination of 100% new French oak cooperage, where it remained for 22 months BOTTLING... produced 3,400 cases and took place on August 25, 1999 OUR THOUGHTS... This is our third vintage of Cabernet Sauvignon made from the estate grapes grown adjacent to the PlumpJack Winery facility in Oakville, California. Enjoying the aromas of this wine we find warm, sweet spice, vanilla extract, mint, bittersweet chocolate, dried black bing cherries and a hint of sweet smoke. Anything but shy when tasted, it’s firm, pleasant acidity and moderate tannins are followed by light clove, nutmeg, ripe bing cherries, boysenberry jam, mint, vanilla extract, bittersweet chocolate and coffee which transitioning to sweet, light toasted oak. Our 1997 Cabernet’s lingering, complex finish gives us clear assurance that its anticipated life span of 10 to 15 years is well warranted.
