日 WATER 水 Sake in its completed form is approximately 80% water, therefore historically good sake brewers have 本 been located near sources of pure, clean water. The snow-capped mountains of Niigata are probably the most famous 酒 example, with both “hard” and “soft” water being used to create different flavour profiles.

RICE 米 There are several types of rice used to produce sake, including soft and fragrant Yamadanishiki from Hyogo, and Gohyakumangoku from Toyama and Niigata which yields a cleaner, dryer flavour profile. The combination of rice used and degree of milling plays a vital role in the quality of the final product.
