As you know, NACAS and NACAS South are all about connection and growth. Carmen Garcia joined Disney Institute in February 2001 and facilitates business programs and team building activities in both English and Spanish. In 2007, Carmen was selected as a Traditions facilitator at Disney University in addition to her role with Disney Institute. Carmen also led the Disney Leadership Excellence program to help high school youth develop leadership skills. In 2009, Carmen served in attractions and operations as guest service manager (GSM) in Fantasyland and in 2011 she transitioned to GSM at the Whispering Canyon Cafe in one of Walt Disney World’s premier resorts: The Wildernesś Lodge.

Prior to joining The Walt Disney Company, Carmen held positions with the Internal revenue Service and the Agency for International Development at the American Embassy in Panama. Inspiring her students to give their best, she taught English and science in Germany, and developed and used immersive techniques to teach English at Kokukoen Community College in Tokorozawa, Japan.

In addition to her international government experience, Carmen also worked for a major telecommunications company as a bilingual sales trainer and spent time at an engineering and research company, working with U.S. military and other high- profile clients in order to design training specific to their individual needs.

Carmen holds a Bachelor of Arts degree in English from the University of Maryland, and a Master’s degree in Education in Interdisciplinary Studies, Curriculum and Instruction from National Louis University. She earned her Certified Professional in Learning and Performance (CPLP) certification from the American Society for Training and Development in 2013.

NACAS SOUTh ANNUAL CONFErENCE | 20 Anthony “Tony” Porcellini, oversees a $100-million, 17-restaurant and bars comprised of noted dining venues such as celebrity chef Todd English’s bluezoo and Don Shula’s Steak house. he also directs an extensive catering and banquets operation that conducts 1.5 million banquet covers each year for the 2,265-room resort property.

An industry veteran with more than 20 years of experience, Porcellini is credited with reinventing the entire food and beverage operation at the resort, making it a leader in the meetings industry and a highly regarded consumer dining venue. Under his leadership, the resort’s restaurant offerings were elevated to include upscale dining and led the way for fine dining in Orlando.

Porcellini joined the then-Walt Disney World Swan resort in 1989 as manager of restaurants. In 1996, he took a position as restaurant operations manager at Marriott’s Orlando World Center. he returned to the newly merged Walt Disney World Swan and Dolphin resort in 1998 as assistant director of food and beverage. In 2004, he was promoted to director of food and beverage.

Porcellini graduated from Johnson & Wales College in 1988 with a degree in hotel and restaurant management. he began his career as a manager trainee and assistant restaurant manager the same year at The Westin hotel in Stamford, Conn.
