At the end of the recipe book you will find a vocabulary list with the most common ingredients for the recipes in the languages used in the countries involved in the project. For the order of recipes we decided to begin with starters and soups being followed by various main courses and desserts. Finally we have added a chapter about typical cookies and cakes. We learned during the project work, that making cookies yourself is not common in many of the countries involved in this project, but nevertheless many nice cookies recipes exist – we wanted to give them some space here and we hope that you will try out some of them! We have added a DVD which shows the making of some of the dishes during the meetings and also contains the recipes.

Ingredients Step 2: Mix in the wholemeal flour Step 3: Add enough milk to make a soft dough. 350g wholemeal flour Step 4: Turn onto a lightly floured board. 125g cream plain flour Step 5: Knead until the mixture comes together smoothly. 275 - 425ml buttermilk or Step 6: Place dough on a floured baking sheet. sour cream Step 7: Cut a cross X over the top with a knife 1 tsp bread soda Step 8: Place in a central oven position and bake in a preheated ½ tsp salt oven 200 degree for approx. 40 mins. Step 9: When baked the bread will have a hollow sound if tapped on the base. Step 10: Cool on a wire tray. A dry tea towel wrapped around the bread at this stage helps to give a softer crust. Tips! - Start out by mixing your bread dough in a large bowl so you have space to mix your dough, which will reduce the chances of you over-mixing and toughening your bread. - Always level your teaspoon of baking soda before adding it to your ingredients. There are two very good reasons for this that can make or break your bread: Too much baking soda will tint your bread green and it can give your bread a very acidic taste which can be quite unpleasant, so remember less is more with the baking soda.

    The Bukovina Cookbook Volume II A collection of authentic recipes submitted by former Bukoviners and descendants of Bukoviners. Compiled and edited by Merle Kastner, 2010. Appetizers Gefilte Fish 4 pounds of Carp, Doré and White Fish, ground together Carp bones (and/or head) 2-4 grated Onions 1 ½ cups of Matzo Meal 2 ½ tablespoons Sugar 1 tablespoon black Pepper Salt to taste To begin, put ½ of the grated onions in the bottom of a large pot, and cover them with the carp bones (and/or head). Then, with a large knife or cleaver, chop together all of the re- maining ingredients until well blended. Make two large loaves and place them in the pot. Add cold water until the loaves are covered. Bring to a boil and cook over a low heat for 1 hour. Once the pot cools, remove the loaves and store them in the fridge. Then strain the remaining liquid and store separately in the fridge. Once chilled, the liquid thickens to form a jelly-like sauce. To serve, cut the loaves in slices and garnish with cooked sliced carrots. The fish is accompanied by grated horseradish and the jellied sauce.
