The vineyard of Château Henri Bonnaud is located in Le Tholonet village, 6 km South-East from Aix-en-. The vineyard overhung by the Sainte Victoire mountain is about 27 hectares shared between several appellations, mainly on AOC Palette.

Since 2010, all the estate is in organic farming.

The history of Château Henri Bonnaud, is first of all a men’s story, proud to be farmer; outstanding workers.

Stéphane SPITZGLOUS represents the third generation and was born on the estate. Raised by his grandfather, he used to spent whole days with him on the tractor. In 1996, Henri Bonnaud finally accepts to let him take over the Domain. But Stéphane has other ambitions: to make his own wine and to build a « chateau ».

Stéphane makes his first vintage in 2004. The Quintessence line is created in 2006.

Concerned by the environmental protection, we are using neither artificial fertilizers nor weed killers.

By deep conviction, Stéphane made the choice of an organic conversion in 2010 for the whole estate. The 2012 vintage and the next vintages are issued of an organic wine production.

Stéphane is an enthusiast, a self-taught winemaker, full of secrets that he shares only with his tanks and his barrels. Henri Bonnaud, himself, spoke to his vines…….but be quiiieeet!

The AOC Palette is one of the smallest appellations of Provence and one of the oldest. Created in 1948, stemming from the specific character of its terroir, its microclimate and a long winegrowing tradition that produces wines with long ageing ability. It is rich and diverse with old grape varieties from Provence that has been respected and preserved. Its terroir is made up of a chalky gravel soil called of “Langesse” (a lakeside limestone of the tertiary era).

Our plots are located in a natural amphitheater, protected from the mistral by the Langesse and Grand Cabri hills, and by the Cengle and Sainte Victoire mountains; benefits from a microclimate. Our plots are spread out over 14 hectares of this beautiful appellation which counts only a total of 42. “Palette” appellation is one of the most confidential of France.

The main part of the vineyard is south facing. Our vines benefit from an ideal sun exposure, from sunrise to sunset, for the production of red wines to keep and truly rose wines for gastronomy. Small plots of land, north facing, benefit from an ideal exposure for a slowly and perfect maturation of our white grapes. The harvest is made by hand, in 15 kg bins which allow to make a first sorting and preserve the grapes to the cellar.

 Quintessence AOC Palette, is a « micro-cuvée » in White, Rose and Red. The White and Rose are aged in barrels for 8 months, the Red during 18 months.  Henri Bonnaud AOC Palette in Rose (aged 8 months with a part in barrels) and in Red (18 months ageing is made in barrels and in big casks).

The other AOC The wines of the « Terre Promise » line are from different terroirs. These are pleasure wines, greedy and aromatic to be enjoyed in its youth. The plots are located in Le Tholonet and nearby villages (, , Châteauneuf le Rouge, and ).
