KEEN’S CHEDDAR: PDO - made by James Keen - Moorhayes Farm, Wincanton, Somerset. The 500 acre farm is based at the top end of Blackmore Vale, where it is very grassy, as it leads into Dorset, 4 miles away. Their herd of 250 Holstein Friesians mixed with a few Ayreshires goes directly into the vat after milking. One of the secrets of the deep flavour is in the art of maturing over 10/12 months on their farm

OXFORD ISIS - made by Baron Robert Pouget owner and creator of the Oxford Cheese Company. This is a fresh cheese which is sprayed and ripened with Oxfordshire honey mead to develop a pronounced full flavour and pungent flowery aroma with a creamy consistency. It is named after the River Isis that flows through the town.

KIDDERTON ASH - Created by Katy Hollinshead at Raven's Oak Dairy in Cheshire, the soft curds from their goat's milk are ladled by hand into individual moulds and gently drained. Katy then dusts these with food ash and leaved them to slowly ripen, as a silky white mould coat blooms through the ash. An outstanding goat's cheese with a delicate yet distinctive creamy flavour.

OXFORD BLUE - Baron Robert Pouget along with Steve Peace from Hartington creamery first produced cheese at the Oxford Cheese Company in 1994. They wanted to make a cheese that could rival imports such as , Cambozola and Fourme D’Ambert. Oxford is a full-fat semi-soft Stilton- type blue cheese with a creamy texture and sharp clean flavor.

TOMME DE SAVOIE – A semi soft cheese made from the skim milk left over after the cream is used to make butter or richer . As a result, the cheese has a relatively low fat content (between 20 and 45%). The cheese is made year-round, and typically has a slightly different character depending on whether the cows are fed on winter hay or summer grass.

BLEU D’AUVERGNE – Auvergne region. From the volcanic landscape of the region emerges this blue veined smooth textured cheese. Matured for 6/8 weeks & was granted AOC protected status in 1975.
