In de winkel is het niet anders: computergestuurde koelvitrines met led-verlichting zijn heel normaal, net als smartkassa’s die zijn verbonden aan het centrale inkoopsysteem van de bakkerij. Contactloos betalen, slimme verlichting – het hoort er tegenwoordig allemaal bij in een bakkerijonderneming. Wat niet is veranderd, is het belang van het vakmanschap van de bakker.
