5 Champagne " The "Special Club" or "The Club Trésors" comprises 28 artisan wine makers, selected from the finest areas of the Champagne region, each one recognized for the quality of their work. It is the only organisation in Champagne to select its members according to a set of unrelenting quality standards.

Each wine maker must make their entirely in his, or her, own premises and cellars. Furthermore the champagne must be made exclusively from grapes harvested in his, or her, own .

The jury of oenologists and wine professionals who select the champagnes, demand irreproachable quality as regards both the work in the and the wines.

Each champagne is subject to two blind tastings (once at the still wine stage before boling and again aer 3 years ageing in bole) by a panel of passionate and distinguished oenologists and wine makers.

A Special Club champagne may only be made in outstanding vintage years.

Only wine makers who have successfully passed these two tests are deemed worthy of puing their chosen champagne in the unique ‘Special Club’ bole which may not be used by anyone except the members of the Club Trésors.

Obtaining this ‘Holy Grail’ is a true accolade and one that requires daily dedication and application by the wine maker." 6 Rosé Champagne "For 26 years François Domi has run the cellars at Billecart-Salmon, a 19th century champagne producer which sells 1.5 to two million boles. His view on rosé champagne has an advantage over white: “It adds colour to the table – and it soens the image of champagne, it makes it more genial.” Mr Domi doses the until he achieves just the right colour and aroma, nothing too tannic, the aim being a champagne with a slight hint of dried fruit and strawberry." 7 Champagne André Clouet André Clouet "Jean-François Clouet, who was born and raised in Bouzy, still lives in the 18th century village house built by his ancestors. As his family were the official printers to Louis XV’s Royal Court at Versailles, Jean-Francois takes great pride in his family lineage. He is also well aware of the influence his family has contributed to the grand and tumultuous history of the region. Acknowledging the privilege and significance of his standing, he strives to continually improve upon the estate and wines by drawing from its past as well as implementing changes that ultimately improve the quality of his wines. The domaine’s 8ha (20 acres) of Grand Cru vineyards are situated in the coveted middle slopes of Ambonnay and Bouzy. They make a full range of Champagnes, culminating in the glorious Cuvée 1911, which is comprised of 100% Pinot Noir from Clouet’s ten best lieux-dits in Bouzy. 9 Alsace "Alsatian wine is all about aromas. Floral and peachy smells fly out of the glass and many of the wines are unctuous enough to pair nicely with savory fowl, like roast quail. Alsace wines give the tingle of brilliant acidity but also offer a rich texture from moderate alcohol (some wines are 14 – 15% ABV). The producers in Alsace do not use oak aging to add spice and richness, instead they rely on a balance of ripeness and alcohol to fill out the flavor." 11 Alsace Domaine Albert Boxler in Niedermorschwihr "Few domaines in France embody this way of life more ably and proudly than Domaine Albert Boxler in Niedermorschwihr. Jean Boxler, many generations removed from his ancestor of the same name that moved here from Switzerland in 1673, currently rules the roost at this humble yet incredibly exciting domaine.

The wines from Domaine Boxler shine due to their finesse, purity, complexity and … all the other things that characterize great wines. Even beer, since Jean Boxler manages to obtain mature fruit in the cooler years as well as to maintain firm acidity the warmer , a Boxler wine will never ever let you down.

The family’s holdings are centered around the ancient village of Niedermorschwihr in the Haut-Rhin, dominated by the imposing granite hillside grand cru, Sommerberg. Jean vinifies micro-parcels within this cru separately, de-classifying some into his Réserve wines and producing multiple bolings of Sommerberg from the different lieux-dits depending on the vintage. Sommerberg gives racy, intensely structured, very long-lived wines. Riesling, Pinot Gris, and Pinot Blanc are the specialties of the domaine, Jean also produces one of Alsace’s best Crémants (and Edelzwickers), an incredible Gewurztraminer grown in limestone, and some of the most hauntingly pure Vendanges Tardives and SGNs in all of Alsace. If that weren’t enough, the Boxlers also own land in the powerful grand cru Brand, the ultimate counterpart to their holdings in Sommerberg." 1680 Crémant Brut NV 85 30% Pinot Blanc, 50% Pinot Auxerrois, 20% Pinot Noir, 3gr Dosage 2420 Chasselas 2014 70 1892 Pinot Gris "Réserve" 2012 150 2741 Pinot Gris Grand Cru "Sommerberg-Wiptal" 2014 147 2740 Pinot Gris Grand Cru "Brand" 2014 172 2748 Pinot Gris Grand Cru "Sommerberg- Vendanges Tardives" 500ml 2011 156 2744 Riesling Grand Cru "Brand" (40 yrs old vines, granite) 2014 172 2743 Riesling Grand Cru "Brand-Kirchberg" (67 yrs old vines, granite) 2014 200 2746 Riesling Grand Cru "Sommerberg-Eckberg (35-40yrs old vines, granite) 2014 162 2745 Riesling Grand Cru "Sommerberg - Dundenstein" (65 yrs old vines, 2014 189 granite) 2418 Gewürztraminer "Réserve" 2014 109 2739 Gewürztraminer Grand Cru "Brand" 2014 175 1681 Gewürztraminer Grand Cru "Brand" 2011 219 2742 Pinot Noir Grand Cru "Sommerberg" 2014 140 1691 Pinot Noir Grand Cru "Sommerberg" 2012 175

12 Alsace - Hommage to Domaine F.E Trimbach The viticultural origin of the Trimbach Family dates back to 1626. For almost four hundred years, the Trimbach Family has been promoting Alsace and its History, its exceptional and fine wines. Located in the heart of Ribeauville, where today three generations work closely together, the family vineyard is now led by Hubert Trimbach, nephews Jean and Pierre, and his daughter Anne, the eldest of the 13th generation. The Trimbachs have a purist vision. The family has always produced wines that are very structures, long-lived, fruity, elegant and balanced: the celebrated Trimbach style.

A note from Jean Trimbach... "Dear passionate lovers of Trimbach wines : Our family is thrilled to offer you at « Gabriel » one of the greatest selection of our wines. Alsatian wines can age…..please try some of these and discover the complexity of matured Riesling, Gewürztraminer and Pinot Gris, which produced in very good or exceptional vintages from the best « Grands Crus » or « Greatest Terroirs » age beautifully. The aroma and the taste of the original fruit is extracted and conserved during the distillation process using steam heated stills. Distillation is a single continuous process with the elimination of the initial “head” and final “tail” distillate in order to keep only the best of the distillation called the “heart.” The Mirabelle Brandy then undergoes aging in stainless steel for a minimum of 16 months."

13 Hommage to Domaine Valentin Zusslin Marie et Jean-Paul Zusslin "Located in Orschwihr, south of Colmar, and established in 1691 by M. Jodocus Cisle (the former name of Zusslin), Domaine Valentin Zusslin is run by the 13th generation of the family, Marie Zusslin and her brother, Jean-Paul, who is chief winemaker. The conversion to 100% biodynamic farming in 1997 was under the direction of their late father, Jean-Marie Zusslin, whom his family called “a man of the earth, proud of his roots and always listening to nature.” The domaine is certified by Demeter, Ecocert and Biodyvin.

Most of the domaine’s 39 acres are in the valley that stretches north from Orschwihr towards Vallée Noble. Zusslin cultivates four noble varieties in Bollenberg, and Sylvaner and Riesling in Clos Liebenberg; both of these parcels are historic lieux-dits. The Clos Liebenberg wines, in particular, express complexity and minerality because of this parcel’s low yields, and rival the quality of the Grand Cru Pfingstberg (that is also planted with Riesling). All the vineyards are worked by hand and horse power.

Fermentation takes place with indigenous yeasts and minimal intervention. The wines age in traditional large oak casks from the Vosges Mountains and are le on their fine lees for up to two years. The higher-level wines can age for up to 20 years." 2749 Crémant Brut Zéro "Clos Liebenberg" NV 133 1368 Crémant Brut Zéro "SS Ajouté", 3 L especially made for Chef Gabriel NV 400 1369 Crémant Brut Zéro "SS Ajouté", 6 L especially made for Chef Gabriel NV 799 2215 Crémant Brut Zéro Rosé "SS Ajouté" NV 91 3093 Auxerrois 2015 60 2636 Riesling Grand Cru "Pfingstberg" 2007 170 229 Riesling Grand Cru "Pfingstberg" Magnum 2010 308 2214 Pinot Noir "Harmonie - Bollenberg" 2012 148

Quarts-de-Chaume - Coteaux du Layon "The Loire Valley has a long history of producing superb, luscious and riveting sweet Chenin Blanc wines from the appellations of Quarts de Chaume, Bonnezeaux, and Coteaux du Layon. Among the most extraordinary wines we have come across in the region are the Coteaux du Layon from Moulin Touchais. While the domaine produces a great number of wines from their 145 hectares of vineyards, the Coteaux du Layon accounts for less than 10% of their production and has earned them a reputation as a true jewel in Anjou." 2037 Château Bellerive Quarts-de-Chaume 1990 413 2050 Moulin Touchais Coteaux du Layon 1993 395 2049 Moulin Touchais Coteaux du Layon 1990 350 2051 Moulin Touchais Coteaux du Layon 1985 405 2052 Moulin Touchais Coteaux du Layon 1979 500 2053 Moulin Touchais Coteaux du Layon 1969 505 2054 Moulin Touchais Coteaux du Layon 1959 750 2024 Domaine des Sablonettes Coteaux du Layon "Noblesse" 1996 310 2026 Domaine des Sablonettes Coteaux du Layon "L'Aubépine" 500ml 1996 255 2027 Domaine des Sablonettes Coteaux du Layon "Les Érables" 500ml 1996 263 2025 Domaine des Sablonettes Coteaux du Layon "Les Érables" 500ml 1994 225

16 Loire Valley Continued Gaston understood clearly that quality must come first—and that quality started with great vineyards. His Haut-Lieu parcel, which lies on Vouvray’s “Première Côte,” or “first slope,” is home to virtually all of the appellation’s acknowledged grand cru vineyards. As the estate prospered in the post-WWII era, Gaston secured two additional prime vineyards on the Première Côte that would ensure the domaine’s stature: Le Mont (purchased in 1957) and Clos du Bourg (farmed since 1953, purchased in 1963). Collectively, these three vineyards account for Huet being the greatest of all Vouvray producers." 2882 Philippe Foreau Vouvray "Moelleux" 2009 142 2035 Gaston Huet Vouvray Demi-Sec "Le Mont" 1964 570 2032 Gaston Huet Vouvray Moelleux "Le Haut Lieu" 1947 2400 2033 Gaston Huet Vouvray Moelleux Première Trie "Clos du Bourg" 1990 600 2034 Gaston Huet Vouvray Première Trie "Le Haut Lieu" 1990 575 3120 Damien Pinon Vouvray "Tuffo" 2015 45 2848 François Pinon Vouvray "Cuvée Trois Argiles" 2015 65

25 Loire Valley Anjou, Touraine "Patrick Corbineau’s estate is located in the idyllic Loire Valley village of Candes-Saint-Martin. He has stubbornly rejected the trends and shortcuts of modern winemaking, despite constant pressure from both family and neighbors. He plows his fields by horse, uses no herbicides or pesticides, and destems all grapes by hand into woven baskets prior to a gentle press and . Hardly anyone works as traditionally as Patrick Corbineau. He is truly one-of-a- kind, returning to ancient techniques and natural winemaking." 2648 La Grange aux Belles VdF Gamay "La Niña - Née des Caprices", Anjou 2015 80 "The Domaine de la Grange aux Belles is one of these fairly recent artisan that make Anjou shine beyond its borders in spite of its humble table-wine status, 1 year in barrel then 2 years in vats to finish its malolactic. Marc Houtin says that this wine is undestructible, he never saw it get oxidized or take volatile, it's very particular from this terroir, always making wines that are well structured, tannic and savory." 1387 Toby Bainbridge and Cathcart VdF Grolleau "Le Rouge aux Lèvres" 2014 66 2063 Patrick Corbineau "Cumelle", Touraine 2011 77 2367 Laurent Saillard VdF Gamay "La Pause", Loire 2015 54 Previously restaurateur in Brooklyn, Laurent Saillard makes wine today. Côte Roannaise "From the very upper reaches of the Loire River, come the delicious, yet mostly unknown, red wines of the Côte Roannaise. Once a major supplier of wine to Paris and the Royal Court, the wine-producing region has shrunk to a mere 250 acres producing 55,000 cases of wine a year. The Gamay grape flourishes on these steep, granite slopes. Many of the vineyards are terraced and the best sites have a southeastern exposure, with all harvesting done by hand. Beaujolais is just under 50 miles away, but a more different expression of the Gamay grape could not be found. Part of this difference is surely due to the fact that a different clone is used, the Gamay Romain." 2130 Domaine des Pothiers Gamay, Villemontais 2014 55 Georges, Denise, Romain Pothier 424 Domaine du Pavillon Gamay, Ambierle 2013 45 Eric Villeneuve

Nuits-Saint-Georges "Nuits-Saint-Georges is a likeable and lively town with a centuries-old history of winemaking. It gives its name to the Côte de Nuits, and its patron saint, Saint Georges, gives his name to their most famous wine. Its AOC, which dates from September 1936, includes the commune of Premeaux-Prissey in the appellation. Most of the wines grown here are Pinot Noir, but there are some plots planted with Chardonnay. 28 Burgundy - Côte de Nuits Domaine de la Romanée-Conti "DRC owns or leases a total of 27.99 hectares (69 acres) of grands crus in Vosne-Romanée, Chassagne-Montrachet and (since 2009) Corton. In order of size, if not necessarily reputation, the vineyards are as follows: La Tâche (6.06 hectares), Romanée Saint-Vivant (5.29), Echézeaux (4.67), Grands Echézeaux (3.53), Richebourg (3.51), La Romanée Conti (1.81), Corton Bressandes (1.19), Le Montrachet (0.68), Corton Clos du Roi (0.57), Corton Renardes (0.51) and Bâtard- Montrachet (0.17).The domaine only produces between 6000 and 8000 cases per year, all of it on precious allocations; La Romanée-Conti rarely yields more than a paltry 500 cases and averages 450 cases."

"Keeping it in the Families..." Two families have co-owned DRC since 1942. The current representatives of the de Villaine and Leroy/Roch clans are Aubert de Villaine and Henri- Frédéric Roch, whose printed signatures appear on every bole. Between 1974 and 1991, Lalou Bize-Leroy, the fiery grande dame of Burgundy, was co-manager with Aubert de Villaine, but she le to concentrate on her own domaine and négociant business, following a dispute about the distribution of DRC's wines. Charles Roch, her sister's oldest son, who oversaw the release of the 1990 vintage but died in a road accident in 1992, briefly replaced her, before his brother, Henri- Frédéric, took over.

Aubert de Villaine's nephew, Bertrand, is also working at DRC these days. Nor does the family tradition end there. Bernard Noblet, who has been the domaine's chef de cave since 1985, took over from his own father, André, who spent 45 years at DRC." 1823 Domaine de la Romanée-Conti La Tâche Grand Cru 2003 8300 2337 Domaine de la Romanée-Conti La Tâche Grand Cru 1979 7900 2338 Domaine de la Romanée-Conti La Tâche Grand Cru 1988 6900 2331 Domaine de la Romanée-Conti Richebourg Grand Cru 2006 4750 2332 Domaine de la Romanée-Conti Richebourg Grand Cru 1993 6450 2340 Domaine de la Romanée-Conti Romanée-Saint-Vivant Grand Cru 2002 5900 2339 Domaine de la Romanée-Conti Romanée-Saint-Vivant Grand Cru 1979 3763 2334 Domaine de la Romanée-Conti Grands-Échézeaux Grand Cru 1999 4900 2336 Domaine de la Romanée-Conti Grands-Échézeaux Grand Cru 1987 3500 2333 Domaine de la Romanée-Conti Échézeaux Grand Cru 1986 4550

This is largely due to M. Gaspard d'Estournel, the "Maharajah of Saint-Estèphe", who founded the estate in 1811. 46 David Arthur Winery "David’s passion for the fermentation process began at an early age. A friendship forged on a seventh-grade school bus resulted in some early experimentation with apple juice and a dark closet. However, that initial interest soon waned and would not resurface until many years later while studying Fine Arts at the University of Denver. It was then that David began fermenting wine. A transition from university life to the restaurant business only strengthened that pursuit. At age 22, David opened his first restaurant with a wine list consisting of 25 wines—no small feat for a fondue restaurant in Boulder, Colorado, in the early 1970s. Aer a successful run with the restaurant, David moved to California and in 1977 opened a restaurant in Petaluma, California. It was here that David’s palate became increasingly trained and refined and his interest in wine expanded exponentially with more exposure and close proximity to Northern country. Over a glass of wine, David’s father, Donald, disclosed he had purchased nearly 1,000 acres of land in the 1950s and 1960s in the Napa Valley and offered David the opportunity to cultivate the land and grow wine grapes. That conversation proved pivotal for David, and it put him on the path to becoming a vintner. David wholeheartedly accepted the challenge and began researching, learning and compiling all the necessary information to grow and cultivate grapes. Through internships at Chappellet Winery, Joseph Phelps Vineyards, and Schramsberg Cellars, David began learning the trade through hands-on experience in the vineyard and the cellar. Every bole of David Arthur wines reflects David’s unwavering energy and passion for the business he spent his life cultivating." 49 USA - Washington State "Washington’s first wine grapes were planted in 1825. By 1910, wine grapes were growing in most areas of the state, following the path of early selers. Initially, it was French, German and Italian immigrants who pioneered the earliest plantings. Large-scale irrigation, fueled by runoff from the melting snowcaps of the Cascade Mountains, arrived in Eastern Washington in 1903 unlocking the dormant potential of the rich volcanic soils and war, sunny desert-like climate. Italian and German were planted in the Yakima and Columbia Valleys and wine grape acreage expanded rapidly in the early part of the 20th century. The first commercial-scale plantings began in the 1960’s. Early commercial producers mentored modern winemaking in the state. The resulting rapid expansion of the industry in the mid-70’s is now rivaled by today’s breakneck pace, where a new winery opens every couple of weeks." 57 Fortified Wines Macvin "Macvin du Jura is a sweet, fortified wine (vin doux naturel) produced in the Jura region of France. Macvin literally means “wine with brandy.” It is made in the mutage method, where grape spirit is added to fermenting wine to stop fermentation and preserve natural sweetness. For AOC Macvin, this brandy must also come from within Jura and have aged at least 18 months in oak. The grapes that can be used are the main Jura varietals of Savagnin, Poulsard, Trousseau, Chardonnay and/or Pinot Noir, all picked late harvest." 116 Domaine Rolet Père et Fils Macvin Rouge, Arbois, Jura NV 59
