Members Biography 2020 to 2022 Dr Amare Ayalew Program Manager, Partnership for Aflatoxin Control in Africa, African Union Commission Headquarters, Ethiopia

Dr. Amare Ayalew is Program Manager of the Partnership for Aflatoxin Control in Africa (PACA) at the African Union Commission. He has led PACA’s strategic planning, launch and implementation of country and regional programs, continental and global advocacy in aflatoxin control and broader food safety, as well as generation of locally relevant evidence through the launch of the Africa Aflatoxin Information Management System (AfricaAIMS) and the Africa Food Safety Index (AFSI). Prior to joining PACA Dr. Ayalew had served as associate Professor of Plant Pathology and Head of School of Plant Sciences as well as Team Leader of the Crop Protection Research at Haramaya University, Ethiopia. Dr Ayalew has researched the occurrence, , and management of aflatoxins and other mycotoxins as well as a broad range of agriculture and Sanitary and Phytosanitary (SPS) Issues for over 20 years and has published extensively. Dr. Ayalew received a PhD (summa cum laude) in plant pathology from the University of Goettingen, Germany, and bachelor’s and master’s degrees from Haramaya University in Ethiopia. He holds certificates in evidence-based policy making, project management, higher institution leadership, SPS and pest risk analysis. He has been a visiting professor at Texas A&M University, USA and USDA’s Borlaug Fellow on SPS. He had been a research fellow of the Bavarian State Research Centre in Munich, Germany, studying mycotoxigenic fungi, mycotoxins, and biorational plant disease control during five different periods between 1993 and 2012.

Mrs Eva Edwards Deputy Director, Food Safety and Applied Directorate, National Agency for Food and Drug Administration and Control, Nigeria

Eva has over 20 years of varied work experience in the health, food safety, nutrition and regulatory sectors, with over 17 of these spent at Nigeria’s National Agency for Food and Drug Administration and Control (NAFDAC) with the vision of ‘safeguarding ’. She is a

Deputy Director in the Food Safety and Applied Nutrition Directorate of NAFDAC where she currently heads the Food Safety/Codex/Regulations Division. As a pioneer staff of the Food Safety and Applied Nutrition Directorate, she was part of the core group that laid down the structure from inception to achieve the goal of contributing to strengthening the national food safety system and creating synergies with other actors in the food safety space. She has a special interest in food safety and nutrition and is an identified resource person providing technical advice and clarification on the subject area. Eva Edwards holds a Master of Public Health degree (with merit) from Vrije Universiteit/Royal Tropical Institute (KIT), Amsterdam, The Netherlands and a Master of Science in General and Medical Microbiology (with distinction) from University College London (UCL) in collaboration with London School of and Tropical Medicine (LSHTM), University of London, England. She is Nigerian, married with children.

Dr Antoinette Brigitte Ngandjio Director, Conformity Assessment Department, Standards and Quality Agency, Cameroon

Dr Antoinette Ngandjio is the Director of the Conformity Assessment department at the Cameroon Standards and Quality Agency. She obtained master’s degrees in “Hydrobiology and Parasitology” (University of Yaounde I, Cameroon)), in “Tropical Infectious Disease” (EDR – AUF, Gabon), in “Public Health and Developing Countries” (University of Paris VI - Pierre et Marie Curie, France) and a PhD in Microbiology at University of Paris VI. She worked from 2002 to 2018 at Centre Pasteur of Cameroon as Deputy Head of the Laboratory of Bacteriology and Head of the laboratory of Hygiene and Environment, accredited according to ISO 17025 Standards in Food and Water Microbiology. She actively participated in the activities of the WHO – Global Foodborne Disease Network (GFN) with the co-organization of workshops in Cameroon on foodborne , and member of the PulseNet Africa Network for antimicrobial surveillance and genomic characterization of foodborne pathogens. She worked as a training workshops facilitator for the Europe-Africa-Caribbean-Pacific Liaison Committee (COLEACP), an international association of companies and experts committed to sustainable and competitive agriculture and development of agribusiness. She was a member of the WHO - Advisory Group for Integrated Surveillance of Antimicrobial Resistance (WHO – AGISAR) from 2015 to 2019.

Professor Hajime Toyofuku Professor, Joint Faculty of Veterinary Medicine, Yamaguchi University, Yamaguchi, Japan

As a professor at the Joint Graduate School of Veterinary Medicine, Yamaguchi University, he provides guidance for a PhD student and 6th grade student, and he teaches Veterinary Public Health, Food safety, Food Science and Veterinary Epidemiology. After graduating from the Hokkaido University in 1985, he specialized in microbial food safety risk analysis in Japan and obtained a PhD in veterinary medicine from Hokkaido University, Japan in 2007. From 1999 to

2004, he worked for Food Safety Department in WHO and served as WHO side JEMRA secretariat. As the vice chair of the expert panel on Microorganisms and viruses within the Food Safety Commission (FSC) Japan, he contributed to finalize the risk profiles on Norovirus and Campylobacter in broilers, and the risk assessment of Tofu in 2018. As the scientific adviser to the Ministry of Health, Labor and Welfare of Japan (MHLWJ) on activities related to CCFH, CCRVDF and CCFICS, he has been providing scientific advice for active participations in these Committee meetings. He was invited to the five JEMRA expert meetings and three FAO Workshop, technical meeting, and regional training workshop. He is author of over 40 peer-reviewed publications and 10 book chapters including chapters in HACCP and GHPs.

Ms Sally Johnston Director Paetae Kairangi, Ministry for Primary Industries, New Zealand

Sally Johnston is the Director Paetae Kairangi, leading programmes targeting organisational and food safety system excellence, at New Zealand Food Safety within New Zealand’s Ministry for Primary Industries. After graduating with a BSc (Microbiology & Genetics) and a MSc (Microbiology) Sally worked in New Zealand’s dairy industry as a microbiologist for 5 years. During this time, she also completed a Masters in Dairy Science and Technology. Sally then entered New Zealand’s public service and has accumulated over 17 years’ experience developing regulatory strategies and systems (export, import and domestic), investigations, developing and implementing standards, making decisions in response to breaches of legislation, developing and implementing procedures for contracted agencies and developing systems to identify significant issues and trends. Sally recently led implementation of New Zealand’s Food Act 2014 – implementing food rules that work for everyone in the food industry from big, technically- sophisticated exporters to artisan producers.

Professor Mungi Sohn Professor, Department of Food Science and Biotechnology, Kyung Hee University, Republic of Korea

Mungi Sohn is a Professor of Department of Food Science and Biotechnology in Kyung Hee University, Korea. Prior to joining the university in April 2018, Mungi was the Minister of the Ministry of Food and Drug Safety (MFDS) Korea in 2016~2017 and was responsible for all matters regarding the safety of foods, drugs, cosmetics and medical devices in accordance with the relevant Food and Drug Safety Acts and Regulations. He also headed and played a key role in developing rules and strategies for various food safety policies and laws such as prevention of foodborne diseases, national food safety control and surveillance systems, imported foods safety control, product testing and laboratory requirements, functional foods safety, traceability, consumer assurances, cooperation schemes of competent food safety authorities while serving as Director-Generals of Food Safety Bureau, Livestock Product Bureau, Consumer Risk

Prevention Bureau of MFDS. Mungi earned his Ph.D. and master’s degree in Food Science from Rutgers University, and a Bachelor of Science degree in from Yonsei University, Korea.

Dr Yongning Wu Chief Technical Officer, National Centre for Food Safety Risk Assessment, China

Professor Dr Yongning Wu is Chief Technical Officer of the China National Centre for Food Safety Risk Assessment (CFSA), and Chief Scientist of China National Expert Committee on Food Safety Risk Assessment. He is Director of Food Safety Research Unit of Chinese Academy of Medical Science (2019RU014), the Director of NHC Key Laboratory of Food Safety Risk Assessment, head of WHO Collaborating Centre of Food Contamination Monitoring (China), fellow of International Academy of Food Science and Technology, vice-president of Chinese Society of Toxicology, president of the Food Authenticity and Traceability Association of the China Institute of Food Science and Technology, deputy director of Public Health of Chinese Medical Association, Standing Member of Chinese Preventive Medicine Association. He graduated from Nanjing Medical College in 1983, then from Chinese Academy of Preventive Medicine for Ph D degree in Public Health in 1997. Dr. Wu serviced as several members of the Food Safety Committee. e.g., internationally, FAO/WHO Joint Expert Committee on Food Additives (JECFA), and WHO Strategic and Technical Advisory Group for Antimicrobial Resistance; nationally, Scientific Committee of Food Safety Commission of the State Council of PR China, Scientific Committee of Food Safety for Hong Kong Special Government of PR China, National Food Safety Risk Assessment Committee of PR China. As the director of food contaminate subcommittee of the China Reviewing Committee on National Food Safety Standards and the head of Chinese delegate of Codex Committee on Contaminants in Food, he is involved in drafting the food safety standards for food contaminants, chaired draft working group on Codex maximum limit of inorganic arsenic in rice internationally; To be member of USP Food Ingredients International Adulterants Expert Panel, he got Award for Outstanding Contribution to USP Standard. He is member of several journal’s Editorial Advisory Board for food and environment science, as well as preventive medicine and has published more than 300 SCI papers, with H index 47.

Dr Nesrine GHARBI GAFSI Assistant Director, Health Control for Food, Feed, and Water, National Agency for Sanitary and Environmental Control of Products, Tunisia Dr. Nesrine Gharbi is the Assistant Director of Health Control for Food, Feed, and Water within the Food Safety Department of the Tunisian Agency for Sanitary and Environmental Control of

Products (ANCSEP/Ministry of Health). She obtained her Doctor of Veterinary Medicine degree from the National School of Veterinary Medicine in TUNISIA in 2005. She joined ANCSEP in 2007 and is now working with a multidisciplinary team on subjects related to food safety aspects, such as chemical and nutritional food and feed risk assessment, national policy and legal texts governing the food control system review and drafting, as well as implementing a national rapid alert network for food and feed. Dr. Gharbi has expertise in chemical and nutritional food and feed risk assessment conducting studies and surveys regarding chemical and nutritional hazards in the food chain, risk analysis and risk assessment activities utilizing total diet studies and individual consumption data, and evaluation of the national food control system. She is also interested in different fields related to , epidemiology.

Dr Farahnaz Ghollasi General Director, Participation in International Standards Development Department, Institute of Standards and Industrial Research, Iran

Farahnaz Ghollasi Moud was born in Birgand-Iran in 1968. She obtained her Bachelor’s degree in Nutrition Science, acquired from Shahid Beheshti University of Medical Sciences (Iran-Tehran) in 1990. After that, she started working as an expert at the Food Laboratory of Birjand University of Medical Sciences for about two years. In 1992, she got admitted to Tehran University of Medical Sciences in Hygiene Science in the nutrition field. Obtained her Master’s degree by 1996 and started working in INSO-General Office of Standards of Khorasan Razavi province. Four years later, she got promoted to the Head of Standard Implementation Department. Within the next few years, she held the position of Head of Standards Development and Research for two years, Head of Laboratory Offices for three years, and Technical and Executive Deputy of Khorasan Razavi’s Standard Organization. In 2011, she got accepted to the University of Ferdowsi for her Ph.D. in Hygiene and Food Safety. After gaining her degree, she was offered the position of General Director of Participating in the International Standard Development Department in INSO and remained in this position until this day. She has lead over 35 national standard developments, as well as three International standard drafting projects. She has performed several research projects on food and food safety. She patented her invention titled “Time Temperature Indicator for Predicting the Shelf Life of Air packed Chicken”. Lastly, she has been active in the audit of food safety management systems.

Dr Fadi Naser Al-Natour Risk Assessment Specialist, Policy and Risk assessment Division, Abu Dhabi Agriculture and Food Safety Authority, United Arab Emirates

Dr. Fadi has 19 years of functional experience and knowledge in different areas of food safety sector including risk analysis, legislation and inspection. He is working with Abu Dhabi agriculture and food safety Authority for more than 14 years, in different positions currently he is a Risk Assessment Specialist. He is the Vice Chairman of the Animal and zoonotic disease Risk

Assessment Committee . Also, He is a project manager of establishments of disease free area and was the project coordinator for Designing and developing a science - risk based inspection system projects for imported food, food establishments in the local market, and animal production sector and its input, also he is leading the Bylaws task force committee Import and Export regulation as well coordinator for other committees. Dr Fadi coordinated development of Rapid alert system for food and feed in UAE and GCC area with high experience in food safety management crises. He has a multidisciplinary food safety Knowledge and experience in Jordan, Saudi Arabia and UAE and ISO22000 certified Auditor. He got bachelor’s degree in veterinary medicine from Jordan University of science and technology and the Master’s degree in food safety management from Higher colleges of technology.

Dr Dina Lithy Director of food mycotoxins lab, Central public health laboratory, Ministry of Health, Egypt

Dina Lithy, the quality manager for clinical labs in the Central Public Health Lab (CPHL). Dina has gained her Master’s degree in Microbiology from Cairo University. She works for many years as microbiologist then became lab director of mycotoxin in food detection lab. She gained the health care and hospital management diploma from the American University in Cairo (AUC) where she improved her managerial skills. She is certified as biosafety officer from 2019. Now, she is responsible for quality system implementation in CPHL as a quality manager and accreditation of clinical labs according to ISO 15189. Her duties also include 1) the assessment of the peripheral of Ministry of health according to LAT2 tools of WHO to apply the international health regulation (IHR); 2) Cooperative Agreements (CoAg) program with CDC for labs evaluation.

Dr Sunil Bakshi Head (Regulations), Food Safety and Standards Authority, India

A postgraduate in dairy sciences (Dairy Microbiology) from the National Dairy Research Institute (Karnal, INDIA), Mr. Bakshi has been associated with Indian dairy sector and food safety regulatory ecosystem for the past few decades. In his current role at Food Safety and Standards Authority of India, he has been coordinating development / notification of national food safety regulations; supporting scientific work in the organization; coordinating all Codex related work at the national level and discharging functions of the Regional Coordinator for FAO/WHO Coordinating Committee for Asia (CCASIA) during the period 2015-2020. He has also been actively involved in the Codex work at the international level and was part of the international lead team spearheading the revision of the Codex text on general principles of food hygiene and HACCP. Prior to joining FSSAI, Mr. Bakshi was associated with National Dairy Development Board (NDDB), India for over a decade and was actively involved in the development of dairy related standards and policies at domestic and international levels, and in the implementation of NDDB’s food safety and quality programmes in dairy value chain. During early years of his professional journey,

Mr. Bakshi has also worked in dairy processing industry for nearly two decades with responsibilities ranging from quality assurance, regulatory matters, production and works operations.

Dr Rubeena Shaheen Director, Standards Division, Food Safety and Standards Authority, India

Dr Rubeena holds a Master’s Degree in Public Health (MPH) from Johns Hopkins Bloomberg School of Public Health, Baltimore Maryland USA and also a doctorate degree (MD) in Clinical Microbiology from SKIMS Soura Srinagar, Jammu & Kashmir, India. She has a technical and administrative experience of more than 22 years in Public Health Sector and food safety and represents India at various global forums including Codex Alimentarius Commission and Codex Inter-Governmental Task Force on AMR. Currently working as Technical Director with Food Safety & Standards Authority of India (FSSAI), her work is generating science-based evidence for setting standards in food safety and nutrition. As Head of Research & Development, Risk assessment unit, she provides technical support to the Scientific Panels and Scientific Committee of FSSAI in taking appropriate decisions in the Standard setting process, providing guidance on development of risk management strategies to mitigate food borne hazards. She is alumni of the International Ford Fellowship Programme, and an active member of Indian Public Health Association (IPHA) Indian, Association of Medical Microbiologists (IAMM) with a number of research publications and books to her credit.

Dr Dasep Wahidin Head Section of Inspection of Distribution for Certain Foods, Indonesian Food and Drug Authority, Indonesia

Dr. Dasep Wahidin is currently the Head Section of Distribution Control for Certain Processed Food at Indonesia Food and Drug Agency (FDA). He received his Bachelor in Pharmacy from Bandung Institute of Technology (ITB), his Master in Food Safety and a doctorate in Food Law from Wageningen University and Research. He is one of the authors of European Food Law Handbook. For over 12 years, He has been conducting inspection on food production and distribution facilities in Indonesia and abroad. He is now also appointed as member of Panel of Expert of ASEAN Joint Sectoral Committee on MRA for Inspection and Certification Systems on Food Hygiene for Prepared Foodstuff Products (JSC MRA ON PF). Dasep has a solid portfolio in food safety with experience stretching across food policy, food science, food governance, food standard and law; whilst remaining true to his professional appointment as a food inspector at Indonesia FDA. He is currently living in Indonesia and focusing in mentoring the application of Good Manufacturing Practices (GMP) and HACCP both for the government authority and food industry.

Mr Jambay Dorji Senior Regulatory and Officer, Bhutan Agriculture and Food Regulatory Authority, Ministry of Agriculture and Forests, Bhutan

Jambay Dorji is currently serving as a Senior Regulatory and Quarantine Officer under Bhutan Agriculture and Food Regulatory Authority (BAFRA), Ministry of Agriculture and Forests, Thimphu, Bhutan. He completed his M.Sc. in Food Safety from Wageningen University and Research, The Netherlands. Before he joined as Senior Regulatory and Quarantine Officer at the BAFRA head office, he was serving as an Officer In-charge at the National Food Testing Laboratory (NFTL). He has experiences in detection of Cronobacter spp. in food products by using MALDI-TOF MS and 16S rDNA sequencing method and has experience in detection of food derived from genetic modification by using qPCR. Currently he is overseeing the implementation Biosafety (GMO) measures in the country, and he is serving as Technical Manager as required under ISO/IEC 17025 for NFTL. He was involved in the formulation of Food Act of Bhutan 2005, Biosafety Act of Bhutan 2015 and its related rules and regulations. He is one of the expert members for harmonization of the safety assessment of foods derived from Genetically Modified Plants among countries viz., Bangladesh, Bhutan, India and Sri Lanka which is ongoing.

Dr Anne Brisabois Scientific Director for Food Safety, French Agency for Food, Environmental, Occupational Health & Safety, France

Dr Anne Brisabois, Senior Microbiologist and Research Director, is currently Scientific Director for Food Safety at the Strategic and Programs Department of Anses for the coordination and management of overall activities of the Agency linked to Food Safety. Before, she had the position as Deputy Head of the Laboratory for Food Safety dedicated to the surveillance and characterization of foodborne pathogens. She was for 20 years, at the head of the Bacterial Characterization and Epidemiology Unit of this laboratory, specialized on surveillance and characterization of main foodborne bacterial pathogens, Salmonella, Listeria, Staphylococci, Bacillus including antimicrobial resistance aspect. Indeed, she managed activities conducted in the frame of national and European mandates for Listeria monocytogenes and coagulase positive Staphylococci, associated national mandates for Salmonella and antimicrobial resistance. She also conducted National and European Research programs based on the development of molecular characterization of them. She manages the Fishery and Aquaculture Department related to microbial and chemical contaminants in seafood products, more recently on emergence of antimicrobial resistance and microplastic issues. She coordinates a national and regional funded project covering the aquatic sector studies from the marine environment to the quality and safety of food products. She has a several years’ experience in the management of research projects in microbiology and foodborne pathogens surveillance with more than 80 publications in international peer reviewed Journals.

Dr Sebastian Hielm Director of Food Safety, Food Safety Unit, Food Department, Ministry of Agriculture and Forestry, Finland

Dr Sebastian Hielm is Food Safety Director for the government of Finland, for which he has worked since 2003. Before this, he was employed 1994-2002 as a food hygiene researcher and lecturer at the veterinary faculty of Helsinki University. He worked as a Senior Standards Officer at the Codex Alimentarius secretariat in Rome in 2014-16. His current work spans over a broad spectrum of food policy and legislation, ranging from nutrition and sustainability all the way to classical food safety and public health. Educated at Helsinki University, Dr Hielm graduated as a veterinarian in 1994 and earned his PhD in 1999 with a dissertation on the molecular epidemiology of Clostridium botulinum. He has published more than 40 peer-reviewed articles in the field of food safety and veterinary public health. Born in February 1967, Sebastian fully enjoys life outside work as well. He spends most of his free time with his wife and four daughters, preferably on his island in the Baltic Sea, where he grows his own vegetables, watches birds, and fishes.

Dr Paul Cook Science Lead, Microbiological Risk Assessment, Science, Evidence and Research Division, Food Standards Agency, United Kingdom of Great Britain and Northern Ireland

Paul Cook is the science lead in Microbiological Risk Assessment at the Food Standards Agency in the UK. Following a PhD in environmental microbiology Paul undertook postdoctoral research on food microbiology. In 1993 he joined the food safety team in the Department of Health followed by the Food Standards Agency when it was formed in 2000. His work covers a diverse range of microbiological food safety issues including food incidents and outbreaks, epidemiology and burden of foodborne disease, antimicrobial resistance, and research and surveillance. Paul has been an invited expert on various working groups/meetings of EU Scientific Committees, FAO/WHO consultations and the UK National Institute for Health and Care Excellence. From 2012-2015 he was a member and then vice chair of the EFSA panel on Biological Hazards. He is currently a member of the International Commission on the Microbiological Specifications for Foods (ICMSF) and the steering committee for the Global Microbial Identifier (GMI).

Dr Sébastien Goux Deputy Head, Unit of Multilateral international relations, The Health and Food Safety Directorate-General, European Commission, Belgium

Dr. Sébastien Goux joined the European Commission in 2005 and is currently deputy Head of Unit “Multilateral international relations” of the Health and Food Safety Directorate-General (DG SANTE). He represents the EU to the Codex Alimentarius Commission and other multilateral fora in the area of food safety. In his previous positions, Sébastien Goux was involved in international

relations in the area of pharmaceuticals and the implementation of the EU food policy on Novel Foods and Foods derived from Modern Biotechnology. Dr. Sébastien Goux previously worked for the Belgian Ministry of Health for 5 years where he contributed to the implementation of the food policy at national level, including through the organisation of official controls, as well as the representation of Belgium to the EU and international fora. He graduated as Engineer in Chemistry and Agriculture and holds a PhD in Agricultural Sciences from the Catholic University of Louvain-la-Neuve, Belgium as well as a Master in Soil Science and Environmental from the University of Reading, United Kingdom.

Dr Jørgen Schlundt Independent Consultant, Denmark

Jørgen Schlundt (JS) is the Doctor Veterinary Medicine and PhD from University of Copenhagen, Denmark, 1983. 1983-99, JS worked in Denmark including a 3-year period in Zimbabwe, focusing on the areas of risk assessment and decision support related to environment protection, food safety and food production (farm-to-table). 1999-2010, JS headed Department for Food Safety and Zoonoses at WHO, focused on definition of risk analysis principles, creation of a new WHO Expert body for microbiological risk assessment (JEMRA), creation of the Adv. Group on Integrated Surveillance of Antimicrobial Resistance (AGISAR), initiation of the WHO global burden of foodborne disease initiative, creation of the International Food Safety Authorities Network (INFOSAN) and the WHO Five Keys to Safer Foods messages. In addition, JS headed the WHO part of the Joint WHO/FAO Food Standards Programme, for which the active arm is Codex Alimentarius and was interim Director for WHO Nutrition Department 2007-8. 2010-15 Professor and Director (DTU Food) at the Technical University of Denmark. 2015-20 Professor Food Science and Technology at the Nanyang Technological University in Singapore, JS is presently Chair of the Global Microbial Identifier initiative, focusing on the potential for new use of whole-genome DNA-sequencing techniques.

Dr William R. Jones Principal Deputy Director for Food Safety Science & Policy, U.S. Food and Drug Administration, United States of America

Dr. William R. Jones was appointed Principal Deputy Director for Food Safety Science and Policy at the US Food and Drug Administration in May 2019 with oversight including interoffice leadership and management of food safety science, policy and international initiatives including systems recognition and equivalence agreements. He oversees senior advisory staff in addition to two research facilities. He previously served as the Director of FDA’s Office of Food Safety. He received his Ph.D. in Cellular and Molecular Biology from the University of Maryland. He conducted post- doctoral research in microbial pathogenesis at the Center for Vaccine Development and Global

Health, University of Maryland School of Medicine, before being appointed to the faculty of the Uniformed Services University of the Health Sciences Department of Medicine at the US National Naval Medical Center. There he directed the hepatitis E virus research and vaccine development program before joining the faculty, then administration, at the University of Maryland Biotechnology Institute. He also has experience in the private sector as a founder and owner of four successful businesses, including an ongoing biotechnology company, AthenaES, having served as President and as Chair of the Scientific Advisory Board for eight years before joining the USFDA in 2001.

Professor Elke Stedefeldt Professor, Department of Preventive Medicine, Federal University of São Paulo, Brazil

Dr Elke Stedefeldt has a bachelor's degree in nutrition, master's degree and PhD in Food and Nutrition. She is a full professor at the Federal University of São Paulo, UNIFESP, Brazil, on the Department of Preventive Medicine, with activities in the undergraduate course and postgraduate program in nutrition. She works under an interdisciplinary view between food, food science, and public policies and from the perspective of and risk. She coordinates the study group: dialogues on risk and food safety in interdisciplinary contexts. Her research covers a broad range of topics in the field of risk analysis including food safety culture, risk-based auditing, risk perception, food consumption quality, food defence, food handler's education, and sociological theory. She is the book author ‘Análise de riscos na gestão da segurança de alimentos’ (Risk analysis in food safety management), and she wrote scientific articles and book chapters. Dr Elke Stedefeldt has broad experience in food safety. She has been collaborating as a food safety expert to the Brazilian government office of "National Sanitary Surveillance Agency". She also developed recommendations to the "National School Feeding Program" on return to school classes during the COVID-19 pandemic.

Dr Annie Locas National Manager, Food Safety Science Services - Microbiology, Science Branch, Canadian Food Inspection Agency, Canada

Annie has 20 years of academic and professional experience related to microbiological risks in food and drinking water as well as management and response of food safety events, surveillance of foodborne pathogens, detection methodologies and risk assessment. Since 2012, Annie held various positions at the CFIA including technical assessor and recall specialist and is currently the National manager for Food Safety Science Services – Microbiology. Annie leads the coordination and implementation of the National food microbiological surveillance programs and related laboratory activities during food safety investigations and foodborne illness events. Annie is a skilled and passionate public speaker and instructor to diverse audiences on various topics related to food

11 safety, surveillance and response and was recognized as a CFIA ambassador for her communications skills as a spokesperson. Annie also received the CFIA’s President’s National Award for partnership and teamwork as a member of the team investigating a food safety emergency event. Prior to joining the CFIA, Annie held positions at Health Canada and École Polytechnique. Annie holds a Master’s of Science (Civil Engineering) from École Polytechnique (Canada), a Diplôme d'Études Pratiques et Scientifique from Université de Poitiers (France), and a PhD (Biology) from Université du Québec - INRS Institut Armand-Frappier (Canada).

Dr Mirian Bueno Almendarez Deputy Director for Food Safety, Subdireccion General de Inocuidad Agroalimentaria, Honduras

Mirian Bueno Almendarez is currently the Deputy Director for Food Safety at the National Plant and Animal Health and Agrifood Safety Agency (SENASA) and Codex Contact Point for Honduras. She has worked on food safety issues for over 12 years, being actively involved with the development and implementation of policies and regulations based on Codex standards. During her career, she has participated in the development and implementation of risk-based inspection and surveillance models for food safety, projects for strengthening the capacities of the national food control system as well as in the negotiation and development of sanitary measures related to agricultural agreements for regional and international trade. Mirian holds a Veterinary Medicine Degree from the University of San Carlos de Guatemala a Certificate in Food Safety from Cornell University and a Master´s Degree on Management and International Business from UTH Florida University.
