Letter of Thanks and Appreciation On the Saturday before Mother’s Day, I went to get gas to mow a neighbor’s yard who recently had surgery. Unfortunately, because of not giving much thought (and probably getting senile since I am not young), I placed my wallet on the back of my car while pumping the gas into my little gas can. Th en, of course, drove off without another thought until later in the day when I realized what I must have done with my wallet. Th us, I spent Mother’s Day thinking my adult sons should just put me away because my mind was going and stupidity was taking over. Later in the afternoon, I received a call from a gentleman that explained that he and his lovely wife were going to a Mother’s Day Celebration at the old KOA Campground and discovered my wallet laying on CR 349 and wanted to let me know they had retrieved it. Even though I was missing my family on Mother’s Day, I could not have received a better gift than having my faith renewed and confi rmed in people and their goodness during there trying times. Delinquent Tax List continued from page 1A Th e delinquent tax list is the list of property owners that have not paid their taxes according to the tax collector records. Th is list is required by law to in a local newspaper of GENERAL CIRCULATION for three weeks in May.

Delinquent Tax Information • All unpaid real estate taxes become delinquent on April 1 each year. • a 3% penalty is added to the taxes. • In May of every year the delinquent taxes are advertised in the local newspaper once a week for three (3) consecutive weeks before a tax certifi cate sale is held following the payment deadline; • Th e advertising cost is added to the amount of the tax bill due. • On or before June 1, the Tax Collector is required by law to hold a tax certifi cate sale. (see tax certifi cate sale at bottom for more info). • Th e certifi cates represent a lien on all unpaid real estate properties. • Th e sale allows anyone to buy a certifi cate by paying off the owed tax debt. • Th e sale is conducted in reverse auction style with participants bidding downward on interest rates starting at 18%. • Th e certifi cate is then awarded to the lowest bidder. Tax Certifi cates • A Tax Certifi cate is a lien on property created by payment of the delinquent taxes due. • It is not a purchase of property. Joyce Bullock Elementary School teachers and staff held their annual spring carnival which proved to be a hit once again. Families were entertained by booths sponsored by the teachers. A great time was had by all as kids of all ages joined in on the fun with a hay ride, face painting, bowling, snow cones, pizza, fi ngernail painting, basketball shooting, tattoos, and much more. Each child was given a bag of "goodies" to help them prepare for the upcoming school year. Each bag included books, word lists, math facts, and other things a student needs to know for the next grade from Kindergarten to 3rd grade.

Th ese two teams were the Robinson Seafood in Cedar Key players in purple and the Chiefl and Flea Market team in the green. Th e American Legion Riders presented Hospice of Citrus County with a donation from Great fun, proceeds raised from their 6th Annual Mystery Poker Run which was held on Saturday, good exercise March 31. Over 100 riders participated in the annual event. Ride Chairperson and Legion and good Riders 155 Assistant Director Tom Voelz commented, “We support Hospice of Citrus sportsmanship was had by all involved. GRANOLA MIX In a large bowl combine: 10 cups old fashioned oatmeal 1 cup wheat germ 1/2 lb. shredded coconut 2 cups raw sunfl ower seeds 1 cup sesame seeds 3 cups chopped almonds, walnuts and/or pecans

In a large saucepan combine: 1 1/2 cups packed brown sugar 1 1/2 cups water 3/4 cup vegetable oil or your choice 1/2 cup honey 1/2 cup molasses 1 1/2 tsp. salt 2 tsps. cinnamon 3 tsps. vanilla extract

Heat until sugar is dissolved but do not boil. Pour syrup over dry ingredients and stir until well coated. Spread onto baking sheets or cookie sheets with sides. Bake at 300 degrees for 45 minutes stirring occasionally for a crunchy granola. Cool and add raisins or other dried fruit as desired.

ENERGY BARS 3 1/2 cups Granola 1/2 cups dark brown sugar 1/2 cup light corn syrup 1/2 cup peanut butter 1/2 cup Spanish peanuts Butter lightly a 9 inch square baking pan. In a saucepan combine brown sugar and corn syrup. Bring to a boil then remove from heat. Stir in peanut butter until blended. Add granola and peanuts until coated. Press into prepared pan. Cool then cut into 1” by 3” pieces.

BELGIAN WAFFLES Very light waffl es that do not need a lot of syrup. 1 cup sour cream 1/2 cup milk 1 egg, separated 3 tablespoons butter 1 cup fl our 2 tsps. sugar 1 tsp. baking powder 1/2 tsp. salt 1/4 tsp. baking soda

In a bowl combine sour cream, milk, melted butter and egg yolk. Whisk together. In another bowl combine fl our, sugar, baking powder, baking soda and salt. Mix thoroughly. Stir dry into wet ingredients beating until smooth. Beat egg white stiffl y. Fold into waffl e mix lightly. Bake in a preheated waffl e iron.
