ACS provides the cheese community with educational resources and networking opportunities, while encouraging the highest standards of cheesemaking focused on safety and sustainability. The cheesemakers listed on the following pages represent all entrants for the 2011 ACS Judging & Competition: 258 companies and 1,676 products. Winners in each category are listed separately. Unlike other cheese competitions, where cheeses are graded down for technical defects, ACS’s goal is to give positive recognition to those cheeses that are of the highest quality in their aesthetic evaluation (i.e. flavor, aroma, and texture) and their technical evaluation. As a result, the highest quality cheeses are those that ACS feels deserve the recognition of an award, based on a minimum number of points awarded (totaling 100 points possible) for first, second, or third place. In categories, or sub-categories, where the minimum number of points is not earned, no award is given. All rights reserved. ABSTRACT The process of new market emergence is a cultural phenomenon embedded in the market’s social environment. However, despite widespread recognition of the importance of this embeddedness, notions of place and community remain at the periphery of most studies. Interesting phenomena come into view when we focus specifically on the links between markets and the communities in which they develop. Surprisingly, even emergent markets, despite their novelty, may come to assume an air of antiquity and authenticity, as communities appropriate them as expressions of their collective identities and artifacts of local history. This thesis, which is based on three papers, extends current understanding of the process by which new markets are constructed and perceptions of authenticity are created, in particular the influence of regional identity therein. The first essay is based on a qualitative, comparative study of the artisanal cheese markets of Quebec and Ontario, and is based on 47 interviews conducted with actors across the industry. The primary findings of this study are the elaboration of the personal and regional forms of authenticity, with the former particularly meaningful to producers and the latter a source of support to producers from other market constituents. The second essay focuses on the Quebec context and is based on a qualitative study of archival materials.

    THE CANADIAN CHEESE GRAND PRIX HISTORY AND THE CHEESE INDUSTRY IN CANADA Starting with the first edition in 1998, Dairy Farmers of Canada (DFC) have spared no effort in order to make the Canadian Cheese Grand Prix an outstanding event. The Grand Prix generates ever-increasing interest, as much from cheese makers as from cheese lovers. Canadian Cheeses in Competition With this competition and the prizes offered, Dairy Farmers of Canada contributes to the development of the Canadian cheese market and offers continuous support to the dairy industry. DFC represents approximately 12,965 dairy farmers. The event’s goal is to make Canadian cheeses better known and appreciated by consumers, as well as the food industry and hotel and restaurant professionals. It also aims to support cheese makers in their search for excellence and in the development of new products and gives them a chance to benefit from the many positive outcomes of a Grand Prix victory. The Canadian cheese industry is comprised of more than 173 cheese makers who produce more than 667 different cheeses (including goat, ewe and cow cheese). The Canadian Cheese Grand Prix is open to cheese makers of any cheese manufactured in Canada exclusively from 100 per cent Canadian Cows’ Milk, Milk-Derived Ingredients from 100 per cent Canadian cow’s milk or both. No imported dairy ingredients are permitted. Canadian cheese, produced with a unique blend of old world tradition and new technology is internationally renowned for its high quality. In order to make excellent cheese, good quality milk is required. This is due to the strict standards that are implemented by provincial government inspections of the milk producers and distributors.
