THE MULTIMODAL KITCHEN: COOKBOOKS AS WOMEN'S RHETORICAL PRACTICE Elizabeth J. Long ii ABSTRACT Sue Carter Wood, Advisor This study positions cookbooks and their associated discourse as rhetorical, relevant to the field and worthy of scholarly study. I argue that cookbooks are more than a simple collection of recipes; the ways in which the texts construct and are constructed by society establish their significance as rhetorical texts. As women have been historically silenced and prevented from using dominant communicative methods, they have needed to develop alternative practices. Naming cooking as a women’s discourse created out of these alternative practices, I argue this form of communication constructed for women and by women has a powerful rhetorical impact which establishes women as experts within their own (private) sphere. This discourse not only enables women to value their own existence but it also gives them a space in which to perform rhetoric, in effect constructing a feminist practice. This analysis is based on synthesis between Certeau’s concept of “making do” and multimodal practice, as I argue cookery discourse is inherently multimodal. I develop my argument exploring what I identify as the major modes used in the discourse: social, visual, and performative. As my project works to extend theories of multimodality, making the concept more widely applicable in rhetorical scholarship, it also furthers work begun by Bizzell, Glenn, and others concerning the limited representation of women in the rhetorical canon, and aids in the rewriting of rhetorical history as women’s stories continue to be added. -

Concurrent Use No. 94002242 Applicant applied to register the mark DELMONICO’S, in typed form, for “Restaurant services,” in International Class 43.1 When the application was published for opposition, Ocinomled, Ltd. More specifically, this study offers a micro- and macro-level linguistic analysis of two television cooking shows from the US, 30 Minute Meals and The Essence of Emeril, and two from Romania, The Recipe from Home and I Eat Therefore I Am; both the US and the Romanian television corpus include one male and one female host. The US shows are among the most popular cooking programs on contemporary television, while the Romanian shows constitute the first food programs ever produced in Romanian. The present study is the first linguistic anthropological study that investigates how culture and stance-taking, or socio-culturally determined attitudes, are constituted in television cooking show discourse. -

UNIVERSITY OF CALIFORNIA Los Angeles American Food Culture, the Language of Taste, and the Edible Image in Twentieth-Century Literature A dissertation submitted in partial satisfaction of the requirements for the degree Doctor of Philosophy in English by Stacie Cassarino 2014 © Copyright by Stacie Cassarino 2014 ABSTRACT OF THE DISSERTATION American Food Culture, the Language of Taste, and the Edible Image in Twentieth-Century Literature by Stacie Cassarino Doctor of Philosophy in English University of California, Los Angeles, 2014 Professor Michael North, Chair In a study ranging from Futurist cookbooks to fast-food lyrics, this dissertation opens up new perspectives on modernist writing in relation to key developments in American food culture. It resituates popular culinary texts within a discourse of literary aesthetics and rereads literary texts as they reflect the conditions of alimentary production and consumption. Pairing chefs and poets — Julia Child & Gertrude Stein, Poppy Cannon & Frank O’Hara, Vertamae Smart-Grosvenor & Harryette Mullen — I show how a modernist fixation on the materiality of edible things, expressed through the language of food, became a way for American writers to respond to the culinary, political, and aesthetic tastes of a nation undergoing tremendous shifts: from an austere wartime sensibility of patriotic eating, to the postwar excess of culinary cosmopolitanism, and finally, to racially inflected supermarket pastorals in the second half of the century. My research engages an i interdisciplinary cross-section of literary and visual forms, drawing on culinary history, art theory, cultural anthropology, race and gender studies, eco-criticism, and food studies, while remaining invested in literary analysis, to illuminate the correlating aesthetic economies of foodstuff and language, and to rethink the collision of popular culture and high art. -

Tyler Florence After 20 years as a host on the Food Network, Tyler has captivated millions of viewers on numerous hit shows, including: “Tyler's Ultimate,” his signature series; “The Great Food Truck Race,” a #1 series for the network; “How to Boil Water,” a cooking show for novices; and “Food 911,” his hugely popular recipe rescue show.
