Chicken

Wine club members will enjoy this recipe with GV Cellars' Super Rosso.

Prep Time: 30-45 Minutes Cook Time: 45 Minutes-1 Hour Serves: Serves 4

Ingredients Chicken

• 4 boneless, skinless chicken breasts, pounded thin • salt and freshly ground pepper • 2 c all-purpose flour, seasoned well with salt and pepper • 4 large eggs, beaten with 2 Tbsp water and salt and pepper to taste • 2 c panko bread crumbs, seasoned with 1 Tbsp Italian seasoning (or oregano, thyme or basil) • 1 c vegetable or pure • 1 lb fresh mozzarella, thinly sliced • 1/4 c freshly grated parmesan cheese • fresh basil or Italian parsley leaves for garnish

Sauce

• 2 Tbsp olive oil • 1 large onion, finely chopped • 4 cloves , smashed with some kosher salt to make a paste • 2 (28-ounce) cans plum tomatoes with juices, puréed in blender • 1 (16-ounce) can crushed tomatoes • 1 small can paste • 1 bay leaf • 1 small bunch Italian parsley • 1 mild chili pepper, chopped • salt • freshly ground pepper

Preparation

Sauce

• Heat olive oil in a medium saucepan over medium heat. Add onions and garlic and cook until soft. Add all tomato ingredients, one cup water, bay leaf, parsley and chili pepper; bring to a boil and season with salt and pepper to taste. Reduce heat and cook until slightly thickened, about 30 minutes.

Chicken

• Pre-heat oven to 400°F. • Season chicken on both sides with salt and pepper. • Dredge each breast in flour, tap off excess, then dip in egg and let excess drip off; dredge each breast on both sides in bread crumbs. • Divide oil between two large sauté pans and heat over high until almost smoking. • Add two chicken breasts to each pan and cook until golden brown on both sides, about 2 minutes per side. • Transfer to a baking sheet and top each breast with some , a few slices of mozzarella, one tablespoon parmesan, and salt and pepper to taste. Bake until chicken is cooked through and cheese is melted, about 5-7 minutes. Remove from oven and garnish with basil or parsley leaves.

Serving Suggestion: Serve sauce over , polenta or mashed potatoes with chicken placed on top.
