Clos Cibonne LOS IBONNE C C Rouge The property of Clos Cibonne dates back to 1797 when the Roux Family purchased it from Jean Baptiste de Cibon, captain of the royal marines of Louis XVI. In 1930 André Roux modernized the winery in order to pursue his goal of producing top quality wines at the estate. This revival ignited an era of fame for the rosés of Clos Cibonne. Varietal/Blend: 90% Tibouren / 10% Syrah Farming Practices: practicing organic Altitude: 50m Soil: clay-calcareous Harvest Technique: by hand Year Vines Were Planted: 1980 Yeast: ambient Fermentation: temperature-controlled maceration / fermentation in stainless steel In the 1980s hard times fell upon the estate and it drifted without clear direction until Brigitte, André Roux’s granddaughter, and her husband, Malolactic: yes Claude Deforge, took it over in the late 1990s. Their immediate goal was Maturation: aged on lees for 4 months to bring the estate back to its grandeur. By renovating the cellars while Vegan: yes preserving the tradition of aging in old foudres, the family began to Alcohol: 13.5% reestablish the vaunted reputation of the domaine. Thanks to their efforts Fined: no Clos Cibonne once again lives up to its standing as one of the 18 Cru Filtered: light filtration Classés in Côtes de Provence. Country: France The heart of the estate is their Tibouren. André Roux was a great fan of Region: Côtes de Provence this native varietal and believed it to be the ideal grape for the region. As Vineyard: le Pradet part of his revitalization he replaced all of the estate’s Mourvèdre with Tibouren. Clos Cibonne soon became synonymous with Tibouren and received special permission from the A.O.C. to list the grape on its labels. The estate’s vineyards are located a mere 800 meters from the coast and are surrounded by hillsides in the base of a bowl that faces the sea. This topography creates air circulation that allows for perfect maturation of the grapes. After harvest the wines are fermented in stainless steel and then aged under fleurette (a thin veil of yeast) in 100-year-old, 5,000L foudres. [email protected] 212-233-1504 .

Spain Navarra has been known for a long time for producing delicate while cheerful rose wines, mostly made from Grenache grapes, or its original name, Garnacha. In fact it is common in Northern Spain to go to a bar and just ask a Navarran wine, and automatically get served a glass of rose. Perhaps the main characteristic of Navarran roses is its deep, almost red, dark pink colour. This wine is not different and you will find a delicate aroma of white and blue flowers. Castillo de Eneriz has been making great wines for a long time, and although their strength are red wines, you will not be disappointed by this rose.     ROSSESE RIVIERA LIGURE DI PONENTE DOC WINE DESCRIPTION Rossese is a rare grape variety which is cultivated mainly in Liguria, probably originated in Greece or even in the Middle East. The most renewed Rossese is the Rossese from Dolceacqua, in the province of Imperia. A recent study showed that this grape is identical to a French variety called Tibouren. It is not yet clear if Tibouren came to Liguria from Provence first or if Rossese arrived in France from Liguria. TASTING NOTES The color is light ruby red. The bouquet on the nose if intense and elegant with notes of black cheery, small red berries and herbal sensations. On the palate it is dry with a light-medium body and delicate tannins. A lovely sip with a long aromatic fruity finish. FOOD PAIRING Ideal with typical first courses of the Genovese cuisine, such as ravioli and pasta with ragu sauce. Also with fish-fry and meat such as rabbit and veal. One of the few wines to be paired with artichockes for its low amount of tannins. Outline analyses were carried out to compare the morphology of archaeological grape seeds from Troyes and Reims (frst c. AD to ffteenth c. AD) with that of a reference collection of modern seeds, including wild vines and traditional grape varieties, believed to be ancient and characteristic of the French vine heritage. This allows us to document the chronological dynamics of the use of the wild Vitis type and of the diversity of the varieties used, based on morphological disparity. After showing the existence of morphological types corresponding to geographical groups, we highlight a geochronological dynamic. Our results show that the wild type is used throughout the series, up to the Middle Ages. In addition, domestic forms, morphologically related to southern varietal groups, are very early involved in the Champagne grape agrodiversity. The groups corresponding to the typical grape varieties of today do not appear until the second millennium. These previously unsuspected dynamics are discussed in light of the social, societal and climatic changes documented for the period. According to archaeological and archaeobiological data, six centuries separate the development of viticulture in Mediterranean France from the advent of Champagne vineyards, which are now famous worldwide.
