Welcome to the Medicine Stories podcast, where we are remembering what it is to be human upon the earth. This is Episode 39, and I am Amber Magnolia Hill. And today we are talking again to Kami McBride, who was my guest on Episode 20, and you all LOVED her just as much as I love her. It’s really exciting having her back. Kami’s book, The Herbal Kitchen, is having its tenth anniversary right now and is being reissued in a brand new format with more recipes, more photos, and so I asked her to come back and talk to me about Kitchen Herbalism. I really love Kami’s focus and what she taught me in my year-long apprenticeship with her in 2007 is on home herbalism. I feel like we have a tendency to really overcomplicate herbalism for people who are new. Just feeling called to learn more about working with plants, it can seem so overwhelming, and where do you even begin, and how are you going to know everything? Which, you’re not, which Kami and I talked about in that first interview. -
WINTER SAVORY (Satureja Montana) Part Used: Leaves in the Kitchen
Hoosier BotanicalsTM WINTER SAVORY (Satureja montana) Part used: Leaves In the Kitchen... Condition: Fresh or dried Winter savory, as its name implies, works well with heavier winter foods. Its piney flavor is especially good with lentils, green beans, pates, game Ethnic span: Italian, meats, white beans, potatoes and other root vegetables. It is a warm and French and German grounding herb and is said to aid in digestion; it is often associated with cooking beans in the culinary world. Harvest sprigs at the ends of the branches all Method: Use leaves year long. The leaves of dried winter savory can be brittle and hard to whole or chopped chew; be sure to crush them well before adding them to a dish. Storage: Dry in Tuscan White Beans Soak, rinse and bring to a slow boil 1 pound of dry dehydrator or white beans (cannellini, navy or northern) and enough water to cover refrigerate for a short by 3". Add 12 chopped fresh sage leaves, 3 cloves sliced garlic, 1 tbsp time olive oil, 2 tbsp chopped fresh winter savory and 1 sprig thyme. Simmer for 1 hour or until beans are soft. Vol. 7(7), 2015, 474-476 Therapeutic Uses of Peppermint –A Review Aishwarya Balakrishnan, Saveetha Dental College,Chennai-77 Abstract: Peppermint (Mentha piperita, also known as M. balsamea Willd), is a hybrid mint, a cross between watermint and spearmint. The plant, indigenous to Europe and the Middle East, is now widespread in cultivation in many regions of the world. It is found wild occasionally with its parent species. The concentrated oil of peppermint has a high menthol content. The oil also contains menthone and menthyl esters, particularly menthyl acetate. Dried peppermint typically has volatile oil containing menthol, menthone , menthyl acetate ,menthofuran and 1,8-cineol. Peppermint oil also contains small amounts of many additional compounds including limonene, pulegone, caryophyllene and pinene. According to the German Commission E monographs, peppermint oil (as well as peppermint leaf) has been used internally as an antispasmodic (upper gastrointestinal tract and bile ducts) and to treat irritable bowel syndrome, catarrh of the respiratory tract, and inflammation of the oral mucosa. Externally, peppermint oil has been used for myalgia and neuralgia. According to Commission E, peppermint oil may also act as a carminative, cholagogue, antibacterial, and secretolytic, and it has a cooling action. Enteric-coated peppermint oil capsules (Colpermin) have been used as an orally administered antispasmodic premedication in colonoscopy. Key Words : Mentha piperita, peppermint, menthone. In that case higher concen- trations (0.5 wt-%) of sage and savory AcO were needed to achieve a more distinct oil stabilisation. Gas chromatography-mass spectrometry (GC-MS) analysis of the isolated oils resulted in the identification of twenty compounds in the oil of S. montana representing 97% of the total oil and 25 compounds of S. cuneifolia, representing 80% of the total oil. Carvacrol was the major constituent of the S. montana oil (45.7%). Other important compounds were the monoterpenic hydrocar- bons p-cymene, g-terpinene and the oxygenated compounds carvacrol methyl ether, borneol and thymol. Conversely, the oil of S. cuneifolia contained a low percentage of carvacrol and thymol. The major constituents of wild savory oil were sesquiterpenes b-cubebene (8.7%), spathulenol, b-caryophyllene, followed by the monoterpenic hydro- carbons limonene and a-pinene. The screening of the antimicrobial activities of essential oils were individually evalated against nine microorganisms, using a disc diffusion metod. The oil of S. montana exhibited greater antimicrobial activity than the oil of wild savory. Maximum activity of winter savory oil was observed against Escherichia coli, the methicillin-resistant Staphylococcus aureus and against yeast (Candida albicans). -

The quality of fresh herbs used mainly as food products, is dependent on a number of factors, including the agronomic and environmental ones. The pharmacopoe- ial material of summer savory is the whole or ground herb, which besides essential oil, contains many other biologically active compounds, such as tannins, carotenoids, flavon- oids, and minerals. The aim of the study was to evaluate the yielding of summer savory intended for bunches harvest and mineral composition of the raw material depending on the sowing time and harvesting time. The savory seeds were sown directly into the field on two dates: 23 April and 7 May 2010–2011. The raw material was collected twice: on 1 July and 16 August. Both the first sowing date and the first harvest date affected most preferably the yield of fresh savory herb. Biological value of the ground herb was high and depended on the time of plant harvest. Significantly the greatest content of L-ascorbic acid (39.60 mg 100 g-1 FW), chlorophyll a + b (88.25 mg 100 g-1 FW), carotenoids (26.15 mg 100 g-1 FW), and essential oil (1.79 ml 100 g-1) was found at plants from the first harvest.
