This chore would occupy most of the daytime hours, so the boiling would be carried out by firelight, in the evenings. A large cast iron cauldron, hung from a tripod could hold 20-30 gallons at a time. In the 1860s, the nation’s steel mills began to produce sheet metal, and the production of the tin can was a boon to sugar makers, as it meant that syrup could be preserved for year-round consumption. Steel buckets with lids made it possible to keep out rain, snow and debris and flat, shallow pans allowed for faster sap evaporation. With these pans,

ELMVALE MAPLE SYRUP FESTIVAL 2019 7 The Maple Tree Song

A Canadian Song By Susanna Moodie (1803-1885) CANADIAN POET, NOVELIST, ESSAYIST

When the snows of winter are melting fast, and the sap begins to rise, And the biting breath of the frozen blast yields to the Spring’s soft sighs, Then away to the wood, for the maple, good, shall unlock its honied store And boys and girls, with their sunny curls, bring their vessels brimming o’er With the luscious flood of the brave tree’s blood, into cauldrons deep to pour.

The blaze from the sugar-bush gleams red; far down in the forest dark, A ruddy glow on the tree is shed, that lights up the rugged bark; And with merry shout, the busy rout watch the sap as it bubbles high; And they talk of the cheer of the coming year, and the jest and the song pass by; And brave tales of old round the fire are told, that kindle youth’s beaming eye.

ELMVALE MAPLE SYRUP FESTIVAL 2019 17 Annual Logsawing Competition

Log Sawing Contest

Watch the Sawdust Fly!

The Elmvale Maple Syrup Festival log-sawing contest is not for the faint of heart. Teamwork, communication and muscle power are required for success. Local dignitaries from several municipalities, come together in teams of two to participate in this exciting event. The pine log, donated by a local sponsor, is set up on the stage, and the referee for the event sits atop the log, to create stability. The 52 inch cross-cut saw is sharpened and oiled and the stopwatch is tested, to make sure it records the timings accurately. Most of the contestants are accustomed to working together in the political arena, but this requires a completely different set of skills. Each couple is allowed a short ‘test run’, after which they are advised to get ready and at the word ‘Go’ they begin the task of slicing off a section of the log in the shortest time possible. The winning teams are honored with the inscription of their names on the festival trophy, a bottle of delicious, local maple syrup and bragging rights for the coming year. Make sure to be at the main stage by noon to witness the excitement, following the introduction of our dignitaries.

48 Pancake Eating Contest

Pancake Eating Contest Firefighters & Community Challenge

The Annual Firefighters Challenge & Group Challenge This is our 21sth annual EMSF worldwide pancake eating contest. MCs Tim & Tom have been working the phones for months trying to find hearty participants for this world-renowned competition. There will be 6 local firefighters competing in their division with local firefighter James Doan who is heavy favourite to win this division once again. New this year is a separate division with 6 community groups participating. Will Marshall Insurance will be sponsoring this year’s contest. Rules are set. Participants need to consume, in the fastest time possible, five large-sized pancakes covered with maple syrup supplied by Greenlaws and Lalondes. Everything must stay down! Due to the choking danger it was decided, by majority vote, that water will be provided. This event would not be successful without the support of the Elmvale Firefighters and our sponsors. Watch for this main attraction on the big stage following the Log Sawing Contest.
