A LOCAL BUSINESS FEATURE Simple gadgets Pacific Physical Therapy that make Nurture by the Sea delicious dinners As kitchen appliance man- ufacturers race to bring to market the latest in profes- sional-level technology, such as talking oven thermometers, there is one person who is getting back to culinary basics. Cookbook author and Food Network television host Ina Garten admittedly avoids trendy gadgets, complicated recipes, and fussy cooking techniques, and still creates dishes with her trademark Bon Vivant elegance and simplicity. In By Marilyn Campbell her just-released, sixth cook- book “Barefoot Contessa Back to Basics” ($35, Clarkson Potter) she teaches readers how to do the same. When Garten says basic, she doesn’t mean “simple mashed potatoes” or “plain roast chicken.” Her 272-page volume is designed to show the aspiring gourmet how to create refined and tasteful meals by taking basic ingredients and enhancing their natural properties using simple culinary methods, such as roasting instead of boiling. She writes, “I believe in cooking or pairing common ingredi- ents in a way that unlocks their true flavors.” And throughout most of the recipes in her book, Garten offers simple, straightforward instructions and stays true to her beliefs. Her Roasted Tomatoes with Basil introduced me to a new method of preparing one of the most commonly seen items in the produce section. I found that slow roasting toma- toes, after drizzling them with balsamic vinegar and olive oil, intensifies and enriches the taste. Her Parmesan Toasts were a simple yet sumptuous appe- tizer or complimentary side item for soup. Again, Garten keeps true to her commitment to using simple ingredients (in this case, salt, pepper, and olive oil) to unlock the natural essence of the baguette and cheese and create a delectable treat. In “Back to Basics,” Garten emphasizes the value of cooking food that is in season. She writes: “Each ingredient has a season and that is generally the time it’s most flavorful.” I found this to be true when I made her Wild Mushroom Risotto. Since November is within mushroom season, I had no trouble finding a bounty of fresh cremini mushrooms at my local grocery store. The dish teemed with the richness of warm fall flavors that were unleashed by the butter, shallots and other ingredients. The book is broken into sections that run the gastronomic gamut from breakfast and lunch to cocktail hour and dinner. Each section starts with a list of useful “how to” tips in which Garten shares her tricks of the trade.
