FROM THE EDITOR LDEI: Past, Present, and Future SUMMER 2 O15 Understanding the past is one of the most powerful tools we have for shaping the future. On pages 12 to 14, pay homage to the achievements of Master Chef Georges Auguste Escoffier. During the fabulous “Edible London” trip Dames participated IN THIS ISSUE in last year, an afternoon tea was arranged at the Savoy Hotel. Executive Chef James Pare guided us on a tour through the kitchens, FEATURES sharing a history of the hotel and Escoffier. The Fabulous Four Chef Pare and his team spent months pour- 4 ing over the hotel archives and records at 6 Gone to Market Musee Escoffier in his efforts to incorporate Escoffier’s dishes into the Savoy’s menus.
