In the 15th Century Champagne as a wine growing region was more important than Burgundy mostly due to the proximity to Paris which is only 1 hour away by train. Back then up until the mid-19th Century Champagne was a still, pale-ruby red wine. It is thanks to Monk Dom Pierre Péringon who had stumbled across the effervescence and helped manage and control it. At that time, wine makers had no temperature-controlled rooms and no filtering mechanism which allowed yeast from the alcoholic fermentation to stay in the wine. In the winter temperatures would drop below freezing and the yeast would fall dormant. In spring it would awake resulting into a secondary fermentation which would produce carbon dioxide gas and result into heavy pressured bottles which would burst. Dom Pierre Péringon had found a way into controlling the amount of yeast in the bottle and finding stronger glass for his bottles which gave him control. That all happened in the late 17th Century but still wine was still much more popular until the 19th Century. Once the bubbles took the whole production over Champagne, it was the large Champagne-houses priority in marketing their product out into the world. It didn’t take long for Champagne conquering the world and being known as the best celebratory drink there is. Prestige cuvèes came to be thanks to Luis Roederer who had made a special, high-quality, longer aged wine for emperor Tsar Alexander II in 1876, this fine champagne was bottled in a flat-bottomed crystal bottle hence the wines name Luis Roederer Cristal. All other Houses followed with this trend a few years later. And now we have the chance in tasting us thru the best sparkling and most complex wines in the world.
