Our land has an abundance of native fruits and spice and we make some pretty good booze as well. The bar staff at Fraser’s are always on the hunt for new and exciting spirits turning focus to Australian products. This section showcases some of the exciting things you may not expect from this vast land. Aperitifs Applewood Distillery Adelaide Hills Producing experimental small batch spirits, Applewood have taken to producing aperitifs in vein of the Italian giants Aperol and Campari, the twist with these is the use of the native berries Lilli Pilli to produce an amazing naturally neon colored aperitif. Perfect to substitute into Spritz or Negroni. Okar 11 Red Okar 13 Maidenii Yarra Valley Vermouth, the new black, is making waves across the land. Once seen as a medicine late in the 20th century it found fame in some classic cocktails which have stayed true to time. Maidenii took to the abundance of native trees herbs grown in Victoria and infused them with quality wine to make a vermouth that is suitable for any time of the day. West Winds hit the market in 2011 with The Sabre, a London Dry Gin, at 40% with toasted wattle seed and The Cutlass, the stronger 50% with kutjera (native bush tomato). Both were entered into the San Fran International spirits competition and both received gold. A classic gin with a twist of Melbourne, The Melbourne Gin Company is hand crafted, batch distilled and non chill filtered. Eleven botanicals, both local and exotic, are each individually extracted, distilled and then blended to create a well-rounded, smooth and slightly surprising gin. The Melbourne Gin Company Dry Gin 12 Hippocampus West Perth Relatively new to the scene Hippocampus has taken Perth by storm. Using only biodynamic wheat from the wheat belt in WA, Vodka, and more recently Gin, are the start of something special for this small independent distiller tucked away down an alley in West Perth. Hippocampus Organic Vodka 12 Hippocampus Batch 1 Gin 13 Cocktail list Autumn 2017 Page 10 Whipper Snapper East Perth Moonshine, true to the name. This recipe has been passed through generations of backyard distillers under lock and key. After making grain and corn whiskey for over 50 years in a garage, Whipper Snapper was born and are producing unique clear and barrel aged whiskeys. Leaning to the American style with the expertise of an Irish whiskey distiller the first prototype of an ‘Australian salute to Bourbon’ was released. Crazy Uncle Moonshine 11 Crazy Uncle Barrel Aged Moonshine 13 Upshot whiskey 16 Limeburners Albany Limeburners paved the way for many ‘craft’ distilleries popping up in WA. Beginning in 2003 with humble starts, this distillery has shown the world Whiskey doesn’t have to come from Scotland. It can come from Albany! Now a mainstay in many venues Limeburners is on the way to becoming an iconic WA brand.
