Always being open to new ideas and techniques is how you keep things fresh and evolve your cooking, whether that’s at home or in a restaurant. So, here’s my desert island Indian- inspired menu – it’s what I cooked at home when all the restaurants had to close during lockdwon in 2020. All of it Carrot pakoras, p82 can be made ahead, and I made most of it based on what I had available in the kitchen. As they say, necessity is the mother of invention.
