Clean the basket and all other accessories with hot water, dishwashing liquid, and a non-abrasive sponge. 3. Wipe the inside and outside of the appliance with a cloth.

USING THE APPLIANCE Handle: The handle should always be used when taking the basket in and out of the unit. The metal locking hook needs to be in place before lifting the basket. See images below.

To place on the basket squeeze the handle together in the open position. Then attach to the basket with the hooks facing down. Once it is secured lock the metal hook. See images below.

Handle Facing 7 Down Air Fryer: 1. Place the appliance on a stable, horizontal and even surface. 2. Place the tray inside the unit on the bottom position. See figure below.

3. Plug the unit into a 3-prong grounded wall socket. 4. Place the ingredients in the basket, if desired spritz with for a crispier finish. Slide the basket back into the unit and remove the handle. NOTE: Do not over fill the basket, as it may affect the quality of the food. See figure below.

5. Close the door of the unit once the basket is inside. Note: The unit will not begin operation if the door is open. 6. To start the unit in manual mode, press the power button. The factory setting is 10:00 minutes and 350°F. The time can be adjusted in 1 minute and 1 second increments by pressing the time/temp button then the arrows on the right side. The temperature can be adjusted in 1° increments by pressing the time/temp button then the arrows on the right side. 7. To cook using one of the six presets, press the power button. Then press Menu until desired setting is flashing. 8 8. These settings can also be adjusted before cooking begins. To adjust the time, press the time/temp icon on the left side and it will illuminate in the center. Toggle up and down with the arrows on the right until desired time is selected. 9. To change the temperature, press the time/temp icon on the left and it will illuminate in the center. Toggle up and down with the arrows on the right until desired temperature is selected. 10. Once desired cooking setting and time are selected, press the start/stop button to begin the cooking process. 11. Some ingredients may require turning halfway during the preparation time. At the halfway point, attach and lock the handle in place using the metal locking clip. See page 7 for how to attach. Pull the basket out of the appliance with the drip tray by the handle and use tongs to turn/move around ingredients. Then slide the basket and drip tray back into the unit, remove the handle, and press the start/stop again for the unit to begin cooking again. 12. When you hear the timer bell, the set preparation time has elapsed. Attach the handle and lock the handle in place using the metal locking clip. See page 7 for how to attach. Pull the basket out of the unit, and place on a heat proof surface. 13. Empty the basket into a bowl or onto a plate. To remove large or fragile ingredients, lift the ingredients out of the basket using tongs.

9 Drip Tray: The drip tray should always be used when the unit is in use except for when using the toast rack. The drip tray should be placed on the boom of the unit. Please see figure below.

Dual Rack: The dual rack should be placed in the unit aer the drip tray has been installed. Please see figure below. The dual rack can be used to place food on. The dual is perfect for more delicate items such as vegetables.

Toast Rack The toast rack should be placed on the bottom of the unit for use. Please see image below. Place bread on the slots then place the rack inside of the unit.

Pan: The pan should be placed in the unit on top of the drip tray. The pan can be used to place food in. This pan is perfect for cooking proteins in.

10 How to Prepare Your Rotisserie for Proteins - The protein needs to be placed on a spit so that it is centered and evenly balanced. It must also be held in place so it does not move around as it is cooking. - Detach the fork on one side by unscrewing. Slide the spit rod through the middle of the protein and out the boom end. Place the protein so that it is in the center of the rod. - Keep the rod running through the center of the protein and aach the fork back on the end. - Insert one end of the spit in to the spit mount hole in the Air Fryer, then the other side.

Rosserie 1. Place food through rotisserie spit rod and use rotisserie forks to attach to rod. See above for how to prepare protein for rotisserie.

Note: Please ensure that the protein has proper clearance around the oven to ensure that it will be able to rotate while cooking. A 2lbs. or less pre trusted chicken is recommended in this unit.

2. Place inside of the Air Fryer and then close the door. 3. Press the Power Button, then press Rotate. See Using the Appliance on page 7 for how to set the time and temperature of the unit. 11 Caution: The rotisserie spit rod and forks will be hot after cooking. Always use oven mitts when handling. CLEANING • Remove the main plug from the wall outlet and let the appliance cool down for at least 30 minutes. NOTE: Remove the basket to let the air fryer cool before cleaning. • Clean the appliance after every use. Do not clean the basket, tray, or accessories and the inside of the appliance with any metal kitchen utensils or abrasive cleaning materials, as this may damage the coating on them. • Wipe the outside of the appliance with a moist cloth. • Clean the basket, tray, or accessories with hot water, some liquid detergent and a non-abrasive sponge. You can remove any remaining food residue with degreasing liquid. • Clean the inside of the appliance with a non-abrasive sponge. • Clean the heating element with a cleaning brush to remove any food residue.

STORAGE 1. Unplug the cord. 2. Make sure all parts are clean and dry.

To Brine: 6 cups water 1/3 cup salt 3 tablespoons maple syrup 1-3 pound pork loin roast Two cups ice For Rotisserie: 1-pound Applewood smoked bacon 3 tablespoons maple syrup divided 1 teaspoon fresh ground pepper 1 tablespoon cider vinegar ½ teaspoon cornstarch 1 teaspoon of water

Combine all brining ingredients except pork loin in a large sauce pan and heat over medium high heat, stirring until salt is dissolved. Pour brine into a 5 quart stock pot: cool for 10 minutes. Stir in the ice. When brine is cool to the touch, about 30 minutes. Add pork roast, make sure it is completely covered by brine. Cover and chill for 8-12 hours. Remove pork loin from brine and dry with paper towels. Insert rotisserie spit rod through center of pork loin horizontally. Secure each end with rotisserie forks and screw tight to attach. Wrap pork loin with the bacon slices crosswise and overlapping. Pin each strip of bacon with a toothpick. Baste pork loin with a tablespoon of maple syrup and rub with peppercorns. Place the rotisserie rod pointed end in first into the air fryer. Place the drip pan in place. Turn the air fryer power to on, press the menu button then select roast, select the rotate button then set timer to 1 hour press start. Check pork loin temperature, you want it to be about 140 degrees. Baste the loin with remaining syrup mixed with the vinegar. Set to air fry for 5 minutes longer while rotating. Remove the roast and let rest on cutting board. Remove the rotisserie spit and toothpicks. Defat the pan juices then add to a small sauce pan, dissolve the cornstarch in water, stir into pan juices and stirring bring mixture to a boil and serve on the side with the pork loin. 14 Broccoli Rabe with Sausage Serves 4

1 bunch broccoli rabe, trimmed and well washed ¼ cup water 3 sweet Italian sausages (approx. 12 ounces) 1 tablespoon olive oil 2 anchovy filets, finely minced 4 shallots sliced 4 cloves garlic, thinly sliced 1 teaspoon kosher salt ½ teaspoon black pepper ¼ teaspoon crushed red pepper flakes Shaved or grated parmesan cheese

Place the broccoli rabe in a skillet with the water and cook until tender 7 to 10 minutes. Drain. Add the sausages to air fryer basket. Set to air fry for 15 minutes. Remove the sausage from the air fryer and medium dice. In the air fryer pan, toss the remaining ingredients with the broccoli rabe and sausage. Place in the air fryer select the toast function and cook for 10 minutes longer. Toss and serve with the parmesan cheese.

15 Broiled New York Strips Serves 2

2-2-inch thick New York strip 1 teaspoon kosher salt ½ tablespoon extra-virgin olive oil 1 teaspoon Montreal Steak Rub (optional) ½ teaspoon fresh ground pepper

Remove steaks from at least 30 minutes before cooking. Rub steaks with salt and let rest for at least 5 minutes. Turn air fryer to broil and let preheat for at least 5 minutes. Rub steaks well with oil and season with steak rub and pepper. Place on drip tray in top rack position in air fryer. Cook for 8-10 minutes per side for medium rare. Let rest on a cutting board before serving.

16 Chocolate Chip Cookies Makes 48

1 cup walnut or pecan pieces 20 tablespoons unsalted butter, room temperature 1/2 cup granulated sugar 1 cup light brown sugar, packed 1 1/2 teaspoons vanilla 2 teaspoons espresso powder dissolved in 1 tablespoon water (or 1 teaspoon with 1 1/2 teaspoon water) 1 large egg 1 large egg yolk 2 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon kosher salt 1 cup rolled oats, pulverized in (measure 1 cup before pulverizing) 3 cups any combination of semi-sweet, bitter sweet, white or milk chocolate chunks

Preheat air fryer to 325 degrees for 10 minutes. Place the rack in the center position in air fryer. Place nuts in a large skillet set over medium heat. Cook, stirring often, for 3-5 minutes or until they become aromatic and start to release their oil. Remove from skillet and allow cooling completely. Cream the butter and both sugars using an electric or stand . Beat in the vanilla and dissolved espresso. Add the egg and egg yolk and beat just until eggs are until blended. Do not over beat after adding the eggs. In a separate bowl, thoroughly stir together the flour, baking powder, baking soda and kosher salt. Add the flour mixture to the batter and mix just until well-blended. Add the oats to the batter and stir just until blended. Stir in the cooled chopped nuts and chocolate. Chill the dough for about an hour if you have the time and would like slightly thicker cookies. Spoon large tablespoonful’s of dough 3 inches apart onto parchment line baking pan. Bake one sheet of parchment at a time for 13-15 minutes or until cookies are brown around edges but still soft in the middle. Allow them to sit on the parchment sheet for 3 minutes, then transfer to a rack to cool.

17 Fried Artichokes with Horseradish Sauce Serves 6

4 medium artichokes, trimmed, quartered, and choke removed 1 lemon, juiced 2 eggs beaten 1 cup Panko 1 teaspoon salt oil for spraying 1 tablespoon fresh chopped parsley Sauce for dipping: 1 ½ cup sour cream ½ cup prepared white horseradish 6 tablespoons chopped fresh chives 4 teaspoons fresh lemon juice

Place artichoke quarters into a bowl with enough water to cover artichokes add lemon juice and soak for 10 to 15 minutes. Bring a medium pot of water to a boil, add artichoke quarters and blanch for 10 minutes. Drain and set aside. In a shallow bowl, place eggs, in another shallow bowl place panko and salt. Dip each artichoke quarter into egg, the gently roll into panko. Spray each artichoke and place into air fryer basket. Set to air fry function for 20 minutes, shaking basket 3 times (spraying each time) during cooking process. Mix together all the ingredients for the sauce. When artichokes are cooked, serve on a platter sprinkled with fresh parsley and with sauce on the side. Serve warm.

18 Fried Olives Serves 4 2 dozen pitted large green olives 2-ounces blue cheese 2 tablespoons flour 1 large beaten egg ½ cup panko bread crumbs ½ teaspoon salt Oil for spraying

Soak olives in cold water for 15-20 minutes. Drain and pat dry. Stuff each olive with blue cheese. Place, flour, beaten egg and panko in separate bowls. Dredge each olive in flour, dip in egg and press into panko. Refrigerate for 15 minutes. Preheat air fryer for 10 minutes. Fill air fryer basket with olives and spray each well with oil. Set to air fryer function and set timer for 10 minutes. Shake basket at least once during cook time spraying with more oil and sprinkling with salt. Serve warm.

19 Panko-Coconut Cauliflower with Curry Dipping Sauce Serves 4

1 cup unsweetened shredded coconut 1 cup panko bread crumbs 1 cup canned coconut milk 1 teaspoon garlic powder 1 teaspoon ground cumin ¼ teaspoon cayenne 1 head of cauliflower trimmed and cut into flowerets Oil for spraying (preferably coconut oil)

For Curry Sauce: ¼ cup heavy cream 3 tablespoons mayonnaise 2 teaspoon fresh squeezed lime juice 1 teaspoon rice vinegar ½ teaspoon curry powder 1 teaspoon sweet chili sauce 2 teaspoons finely chopped cilantro ½ teaspoon salt

Preheat air fryer for 10 minutes on air fry. Combine coconut and panko in a shallow dish. Whisk coconut milk, garlic powder, cumin, cayenne and salt together in a bowl. Working with 1 flowerets at a time, dip in coconut milk, letting excess drip back into the bowl, coat well with coconut-panko mixture, pressing gently to adhere; place in air fryer basket. When all cauliflower is coated and loaded in basket, spray well with oil. Load basket in preheated air fryer and set to air fry function set timer to 15 minutes. Shake basket and add more spray half way through cooking cycle. If a darker color is desired, spray one more time and add 5 minutes longer to air fryer cycle.

For Sauce: Whisk together all the ingredients and chill. Serve crunch cauliflower with dipping sauce on the side.

20 Sweet Chili Chicken Wings Serves 2-4

2-pounds chicken wings 2 teaspoons coconut oil 2 teaspoons baking powder Oil for spraying 1 ½ teaspoons Sriracha Salt (see recipe) 3 tablespoons sweet chili sauce 1 teaspoon Louisiana hot sauce 1 tablespoon melted butter

Preheat air fryer for 10 minutes. In a large bowl toss wings in coconut oil and baking powder, let rest for 5 minutes. Add wings to air fryer basket, spray with oil and sprinkle with Sriracha salt; set to air fryer function and timer for 30 minutes. Shake basket, spray wings with oil and sprinkle with more salt every 10 minutes. Combine remaining ingredients in a large bowl. Using tongs, while wings are hot toss in bowl of sauce and serve hot.

21 Toasted Cheese Sandwiches Serves 2

4 slices brioche bread 1 tablespoon mayonnaise 4 slices Jarlsburg Cheese 4 slices mild cheddar

Preheat air fryer for 10 minutes. Place the rack or drip tray in bottom slot. On a cutting board lined with parchment, spread mayonnaise on one side of each piece of bread and lay mayonnaise side down on parchment paper. Top two slices of bread with two slices of Jarlsburg, then top each piece of with the two slices of cheddar each. Top with a slice of brioche, mayonnaise side up. Place on rack in preheated air fryer. Set on toast for 4 minutes. Turn each sandwich and depending on how dark you like your crust cook for 4-6 minutes longer. Let rest before cutting.
