The History

- Domaine Weinbach was established in 1612 by Capuchin monks, enthralled by the beauty of the setting and the quality of the soil. The land itself had been planted with vines since before the year 890. - In 1898, it was acquired by the Faller brothers who left it to their son and nephew, Théo. - Théo Faller was a prominent figure in winegrowing and an ardent defender of quality production. He developed, expanded and enhanced Domaine Weinbach. - Colette, Catherine and Laurence Faller and their team have pursued the family’s passion for the great of Alsace and its unrelenting commitment to delivering excellence.

The

- The Domaine owns 28 hectares (69 acres) located in the heart of Kaysersberg’s valley and hills – between 600 and 1,400 feet above sea level. - The valley site amplifies the region’s sunny and dry semi continental climate – autumns are long and sunny favoring a slow, extended ripening of the and the development of elegant and complex aromas. - The great geological diversity of our allows us to cultivate the unique varieties of Alsace in their finest forms and expressions.

The Terroirs

- Grand Cru Schlossberg : (picture above left) first grand cru to have been classified in Alsace migmatites: granitizised grauwacke-sandstones and shales from the Devonian age (first geological era) acid siliceous soils made of coarse sand – they are mineral rich which determines the finesse and multiplicity of aromas in the wines steep terraced slopes, full southern exposure, between 230 and 350 m altitude The Schlossberg produces a wonderfully pure fruity expression of the Riesling grape, with remarkable finesse and elegance.

- Grand Cru Furstentum : Gewurztraminer (picture above right) marl calcareous sandstone from the lower Dogger period (second era) brown calcareous soils with a pebbly structure which accumulate both moisture and heat steep slope, facing south, between 300 and 400 m altitude Furstentum Gewurztraminers show great finesse and remarkably complex and elegant aromas.

- Grand Cru Mambourg : Gewurztraminer calcareous and marl conglomerates from the tertiary period limestone magnesium soils steep slope, facing south, between 210 and 350 m altitude Mambourg Gewurztraminers display intensity, a powerful bouquet and a very long finish. This terroir develops a beautiful Botrytis and produces Vendanges Tardives or Sélection de Grains Nobles in most .

- Altenbourg : Pinot Gris and Gewurztraminer located at mid slope, just underneath the grand cru Furstentum – identical geological base limestone, clay and some sand gentle slope, due south, between 220 and 300 m altitude Pinot Gris and Gewurztraminer with great finesse, richness and intensity, superb late wines.

- “Cuvée Laurence” Vineyard : Pinot Gris and Gewurztraminer located at the foot of the same hill, underneath the Altenbourg limestone, clay and some alluvium Pinot Gris and Gewurztraminer.

- Grand Cru Marckrain : Gewurztraminer limestone-marl with a predominance of Oolithic limestone pebbles and coastal conglomerates of Oligocène origin gentle slope in east to south-east exposure, between 200 and 300 m altitude Marckrain Gewurztraminers are full-bodied with richly-developed, complex aromas. Our first release from this terroir is in the 2005 .

The

- The wines are made in the vineyards - our primary aim is to grow the highest quality grapes, the only way to craft truly great wines

- We are “ propriétaire-récoltant “ which means that we only use our own grapes – all our wines are 100 % estate grown and bottled

- Our vineyards have been cultivated organically for the past 20 years no herbicides – the vineyards are tilled or hand-hoed under the rows in the highly uneven areas to favor the life of the soils and the development of deep roots only animal and vegetal compost as fertilizers no chemical insecticides or systemic pesticides

- Biodynamic methods were started in 1998 on half of the surface and gradually extended to all the vineyards as of the 2005 vintage. Biodynamic viticulture aims to bring balance and forces of life to the soil and the vines. The exchanges that take place between the root and the foliage systems allow the soils characteristics to be transferred to the grapes, increasing the quality of their flavors and the expression of the terroir.

- We prune short to have low yields, well under what is allowed in Alsace.

- The harvest is done by hand at optimum ripeness – with a significant presence of botrytis even in the dry wines - to enhance both aromatic complexity and body in our wines.

The

- Minimal intervention but constant attention allows the individual qualities of the grapes to flourish and the terroirs to express themselves

- The grapes are gently and very slowly pressed in whole clusters

- The wines are vinified in ancient old casks (1500 to 6000 liters) – we stay away from new wood to preserve the purity of fruit and the freshness of our wines

- We only use native yeasts for fermentation – this favors natural, long, slow fermentations that enhance terroir authenticity and complexity in the wines – fermentation can last into the June or July following the harvest.

The Wines of Domaine Weinbach

Expressing the alliance of the different varieties with the various soils, and almost the individuality of each plot results in numerous cuvees, as many as 25 per vintage. Not to mention the Vendanges Tardives, Sélections de Grains Nobles and Quintessences de Grains Nobles. Thanks to such great diversity in balance and aromas, there is a wine to accompany every occasion and every dish from any cuisine style. Some favourite matches are suggested.

Sylvaner Réserve

- origin : Clos des Capucins - dry, fresh, fruity, lively wine with very good body and personnality - pairing: delightful with hors d’œuvres, charcuterie, oysters, and light dishes.

Pinot Blanc Réserve

- origin : Clos des Capucins and a plot in the Cuvée Laurence vineyard - elegant and well balanced, dry, with bright fruit, it combines freshness and suppleness and offers very good palate presence - pairing: very versatile wine, great with appetizers and lighter dishes, also nice as an aperitif

Muscat Réserve

- origin : Clos des Capucins and Altenbourg - fine, perfectly dry, seductively fragrant and fruity wine with intense grapey aromas and taste – dry Alsace is not as well known as it deserves - pairing: ideal as an aperitif, excellent with asparagus and vegetable appetizers and dishes as well as lighter exotic cuisine

The Rieslings of Domaine Weinbach

Riesling is the king of and the love of the Faller family. We believe that it makes the greatest white wines in the world. Riesling is dry, racy and penetrating, with delicate fruit and a bouquet of great finesse. On the Schlossberg because of this grand cru’s particular quality and if ripe, from grapes that might be picked well into November, our Rieslings are not as austere in their youth as they can be. They combine liveliness, aromatic finesse and great elegance and show aromas and flavours of flowers, citrus and exotic fruit, apple, pear and minerals. Riesling is a prime partner for fish and seafood and has the acidity to cut through cream sauces. The richer wines are also very good with white meats and poultry.

Riesling Cuvée Théo

- origin: Clos des Capucins - dry and intense, with a lot of finesse - pairing: fish dishes, salads, white meats and poultry in light or sauce preparations

Riesling Cuvée Sainte Catherine

- origin: lower part of the grand cru Schlossberg slope – part of this vineyard lies outside the grand cru border - picked in a later harvest and from plots located lower in altitude, fermented to dryness, shows wonderful richness and concentration, though preserving the freshness and natural elegance of Riesling - pairing: ideal with fine fish and seafood such as sea bass, halibut, sole, turbot, scallops, … also beautiful with white meats and poultry in lighter preparations

Riesling Grand Cru Schlossberg Cuvée Sainte Catherine - Riesling Grand Cru Schlossberg Cuvée Sainte Catherine « L’Inédit ! »

- origin: the Domaine’s oldest vines, over sixty year old, situated at the mid slope of the grand cru

- Riesling Schlossberg Cuvée Sainte Catherine is the richest and finest of our dry Rieslings. This cuvée illustrates the splendor of the Schlossberg with its aromas of very ripe exotic fruit, pineapple, mango, candied grapefruit. It is full and rich on the palate, well structured and finely balanced, dry with a long, harmonious finish. - pairing : marries beautifully with fine fish in a sauce, scallops, lobster, crab, and lighter poultry preparations - Riesling Schlossberg Cuvée Sainte Catherine « L’Inédit ! », comes from the richer part of this same vineyard. « L’Inédit !» was produced in 1998 for the first time, and in every vintage since. It is made in these specific plots where Riesling reaches year after year exceptional maturities, thanks to botrytis, without “ trie ” (specific selection). This cuvée is silky and dense, suave at the beginning and finishing dry. It carries around 20 g/l of residual sugar (22 g/l in the 2003 vintage, 28 in 2004, 25 g/l in 2005, 26 g/l in 2006), shows a wonderful balance and the incredible elegance of Riesling. - pairing: It is superb on its own, with lobster, scallops, crab and fish dishes with a richer sauce.

The Pinot Gris of Domaine Weinbach

The Weinbach Pinot Gris are rich, spicy, full-bodied wines which have a lovely mellow, buttery taste and often develop aromas of peach and apricot. They marry well with poultry (poularde aux morilles is a great match, duck, goose), white meats, even in rich sauces. The unctuous, sweet Vendanges Tardives wines are a must with foie gras.

Pinot Gris Cuvée Sainte Catherine

- origin: lower part of the Schlossberg and from the Clos des Capucins - it is the driest of the Pinot Gris range (between 8 and 11 g/l residual sugar – precisely 10,5 g/l in 2005). Rich, spicy, gentle and dry. - pairing: it is a very good accompaniment to white meats, veal in a creamy sauce, poultry such as duck, goose, and also risotto, lighter game and grilled oily fish such as salmon, tuna, swordfish… also delicious with exotic spicy dishes.

Pinot Gris Cuvée Laurence - Pinot Gris Altenbourg Cuvée Laurence*

- origins: limestone-clay soils below the Altenbourg vineyard for the regular Cuvée Laurence and the Altenbourg vineyard for the Altenbourg Cuvée Laurence* (the Altenbourg being itself located underneath the grand cru Furstentum) - picked in a later harvest, with significant botrytis presence, these cuvées show great aromatic complexity, depth, richness and power, always with balance. The second (carrying around 30 g/l residual sugar – exactly 35 g/l in the 2005 vintage) is a little richer and rounder than the first (20 g/l). - pairing: these cuvées marry beautifully with poultry in sweet or spicy preparations, white meats in richer sauces, or foie gras preferably sautéed (Pinot Gris Vendanges Tardives is a finer match with the foie gras terrine).

The Gewurztraminers of Domaine Weinbach

The rich, velvety, rose-scented, exotic, spicy Gewurztraminers from Domaine Weinbach are recognized as being very fine expressions of the grape. The Altenbourg vineyard and the Grands Crus Furstentum and Mambourg are extraordinary terroirs for the Gewurztraminer grape.

They go very well with rich dishes like pork and goose, as well as with the exotic spices of Indian, Asian and Moroccan cuisine. The hotter and/or sweeter the dish is, the richer the accompanying Gewurztraminer should be. The richer cuvées are exceptional with foie gras and strong, ripe soft cheeses. g

Gewurztraminer Cuvée Théo

- origin: Clos des Capucins - fine, suave and elegant (22 g/l RS in 2005) - pairing: ideally suited to go with spicy cooking such as curries, Thai food. Smoked salmon also makes a good match.

Gewurztraminer Cuvée Laurence - Gewurztraminer Altenbourg Cuvée Laurence*

- origins: limestone-clay soils at the foot of the Altenbourg vineyard for the regular Cuvée Laurence and the Altenbourg vineyard for the Altenbourg Cuvée Laurence* - these cuvées show captivating, rot-ennobled flavors of lychee, candied grapefruit, yellow fruits, flowers, … they are rich and fine with great verve and elegance. Years in and out, 25 – 35 g/l residual sugar for the Cuvée Laurence (32 g/l in 2005), 40 – 50 g/l for the Altenbourg (42 g/l in 2005) which is always at the level of a Vendanges Tardives. - pairing: they are wonderful on their own, as an aperitif, with rich and spicy dishes, preparations with sweet or fruit elements (blood orange duck) or foie gras. The Altenbourg is also great with ripe, soft cheeses such as Munster, Comté, Epoisses, Roquefort, any Blue cheese,...

Gewurztraminer Grand Cru Furstentum Cuvée Laurence*

- origin: grand cru Furstentum - wonderful combination of finesse, subtlety, and power with notes of spices, candied grapefruit and flowers. This terroir develops superb botrytis which regularly produces beautiful Vendanges Tardives and Sélections de Grains Nobles. The Furstentum Cuvée Laurence* itself is always at a potential level of Vendanges Tardives. The 2004 carries 60 g/l RS, the 2005 will be released as a Vendanges Tardives in 2007. - pairing: great on its own, with foie gras and rich, fragrant cheese.

Gewurztraminer Grand Cru Mambourg Cuvée Laurence*

- origin: grand cru Mambourg - beautiful combination of richness and elegance with aromas of yellow fruit. Mambourg regularly gives birth to exceptional Vendanges Tardives and Sélections de Grains Nobles. The Gewurztraminer Mambourg Cuvée Laurence 2004 carries 48 g/l residual sugar. - pairing: great on its own, with foie gras and rich, fragrant cheese.

- origin: grand cru Marckrain - full-bodied with richly developed, complex aromas. Our first release from this terroir is in the 2005 vintage. - pairing: great on its own, with foie gras and rich, strong cheese.

The Vendanges Tardives, Sélections de Grains Nobles and Quintessences de Grains Nobles from Domaine Weinbach

In exceptional years, when the harvest attains extreme ripeness and botrytis develops ideally, the Domaine produces opulent sweet wines, primarily from the Grand Cru sites. These wines range from the stunning “Vendanges Tardives”, the exotic and nectar-like “Sélections de Grains Nobles“, and the fabulous and rare “Quintessences de Grains Nobles“. The name “Quintessence” is a creation of Domaine Weinbach. The first Quintessence was born in the exceptional 1983 vintage. Made from individually picked, very strictly selected - sometimes berry by berry - botrytised grapes, these rare wines exude a honeyed richness, with fragrance of flowers and tropical fruit, a lushness, grace and harmony. Quintessences are produced in extremely small quantities, production levels are most of the times below 150 liters.
