Bourgogne « Terres de Famille » 2011

Like a family reunion, this brings together the members of a single lineage, from a terroir of Cistercian origins. Their variety, Pinot Noir, was first mentioned in writings dating back to over 700 years! One third of the grapes are from our vines on the Côte de Beaune, two thirds from the Côte de Nuits, the domain’s “divine ratio”.

HISTORY

Pinot Noir is a blue-blooded vine, a truly aristocratic variety. The finest of all red varieties, it can truly dazzle the taste buds. First described in 1375, it has always remained intimately linked with the history of . Its grapes give birth to the true soul of Burgundy, and only here is it at its best. Being delicate and complex grape, it is difficult to export. In the words of Jancis Robinson, “No one has come up with a Pinot Noir that could compare with Burgundy”.

OUR VINES

Situation: Pinot Noir in all its ardour and delicacy, its spirit and sensitivity, its authenticity... with parcels at Gilly-lès-Cîteaux, a stone’s throw from the and our Vougeot , combined with a rustic hint of Côte de Beaune. Vougeot was where the Cistercian monks kept their wine. Our Bourgogne Terres de Famille is a combination from several of our parcels, in accordance with strict appellation d’origine contrôlée rules, to arouse the excellence of Pinot Noir. Montée Rouge, for example, is one of the best Beaune climats.

Grape variety: 100% Pinot Noir Soil and subsoil: clayey silt on the surface, clay deeper down. Non-calcareous soil. Planting density: 10 000 vines / ha Total surface: 0,70 ha Rootstock: massal selection only. Pest management since 1992 Organic agriculture. Received official approval in 2001. Training style: Guyot Vineyard news: Earthing-up of the vines in winter. Spraying of nettle and rhubarb, horsetail, yarrow, tansy, comfrey tea during each treatment. Suckers removed in spring.

HARVEST

Harvest date: September 2nd and 3rd, 2011 (Lunar Node). Selection: 10% hand-sorted in the vineyard and on arrival in the winery. Yield: 48 hl/ha

VINIFICATION

Harvest de-stemmed, not crushed. No yeast addition. Gravity vated. Maceration: pre-fermentation, cold (12-15°C) during 5 days. Length of maceration: 20 days. Cap-punched once a day until mid-fermentation and ligjt pumping-over until the end of maceration. Pressing with the vertical press.

BLENDING

10% of Côte de Beaune in the Bourgogne 35% of Beaune “La Montée Rouge”

AGEING

Length: 10 months Type: in oak barrels. Percentage of new barrels: 30% Toasting: gentle and slow. Source of wood: Center of France “grain fin” No new barrels racked. Light and soft filtration. No fining.

BOTTLING

By gravity. July 4th, 2012. (Fruit day) Limited to 7550 bottles.
