Bread is a staple food consumed worldwide in a daily basis, and the use of different baking technologies may modify the glucose and insulin response. The aim of this review was to critically record the human studies examining the application of different bread making processes on postprandial glucose and insulin response to bread. Literature is rich of results which show that the use of sourdough fermentation instead of leavening with Saccharomyces cerevisiae is able to modulate glucose response to bread, whereas evidence regarding its efficacy on lowering postprandial insulin response is less clear. The presence of organic acids is possibly involved, but the exact mechanism , subject to the Cambridge Core terms of use, available at of action is still to be confirmed. Knead for several minutes, until lumps disappear. As you knead, dough will become sticker and easier to knead. When this point is reached, stop kneading. 6. Plop dough back into the middle of bucket and bury it mid-way once again. 7. In this 3-5 day window it should begin showing signs of fermentation and begin developing a slightly fermented, earthy odor. Day 6: 1. Abstract approved:__________________ ___________________ Andrew Ross Recently local grains have become an area of economic growth. Local grain products, including whole-wheat and sourdough products, are increasingly in demand for their health benefits, unique flavor profiles, and association with local food movements. These local grain economies are beginning to boom, but they lack the technical aid that already exists in the commodity grain systems. This project aims to address the technical needs of local grain economies by exploring potential test bake methods using formulas including whole-wheat and sourdough. The key findings in the project were as follows: • Screen size (inferring flour particle size) did not affect baking performance. • My baking skills allowed me to repeat test bakes across independent baking days without significant differences in aspect ratio and loaf volume (strengthening the validity of the data throughout the project). • There was no systematic influence on loaf quality (aspect ratio or loaf volume) when the duration of starter fermentation was ± 1 hour from the targeted optimum duration.
