Cured beef (Spanish cecina or Italian bresaola) with sliced mandarin orange & sunflower seeds

Ingredients: Equipment: 1 100g pack of bresaola or cecina - Plate for Serving 2 mandarin oranges - Wine Glasses! 1 bag of sunflower seeds, without the shells EVOO Extra Virgin Olive Oil Toast (optional)

Instructions: On a plate, add the beef, sliced oranges & sunflower seeds together. Drizzle EVOO on the beef & enjoy with your Mencía!

Serves: 4 people Prep time: 5 min Cook time: 0 minutes Toast with Manchego Cheese & Caramelised Peppers

Equipment: Ingredients for caramelised peppers: - Sharp Knife - 2 red bell peppers - Cooking Pot or Pan - 177 ml // 3/4 cup water - Spoon for stirring - 79 ml // 1/3 cup apple cider vinegar - Plate for Serving - 196 g // 7oz granulated sugar - Wine Glasses! +

- Manchego cheese at ROOM TEMPERATURE (under strict instructions from Heather’s Spanish mother-in-law, Pilar, you must take the cheese out of the refrigerator at LEAST 2 hours before serving. BEST if it never goes into the fridge!)) - Bread for toasting

Instructions: Halve the peppers, remove stem and seeds. Slice into 1/2 inch strips and cut again in the middle. In the cooking pot or pan, add water, vinegar and sugar. Stir well to dissolve the sugar and bring to the boil. Add the sliced peppers and cook on medium-low heat for approx one HOUR.When they are done, all the liquid is absorbed and the peppers are tender, and caramelized. Toast the bread, add sliced (room temperature) manchego cheese, and the caramelised peppers & enjoy!

This week we will be tasting a red wine made from Mencía grape, mainly form DO Bierzo.

When to open: 5-30 minutes before the tasting

- Mencía is grown in 4 Spanish Denominaciónes de Origen, D.O.s: DO Bierzo, DO , DO Valdeorras, & DO Ribeira Sacra, as well as in Portugal. - "Like a pinot noir but.. wild." - Raúl - The best ones are medium-full bodied, "with bright acidity that helps keep grippy tannins in check."

Serve at room temperature: 19- 22ºC / 67-71 °F.
