PINSA ROMANA PIZZA

“PINSA ROMANA” pizza is super special. All our premium toppings are seasonally selected, fresh and premium and that goes without saying, but it is the flour that demands the most attention. “Pinsa Romana Flour” is an ancient formulation of different flours that, was stumbled on by the Roman army’s when supplies dwindled during their long journeys and quests for World dominance. They found rice flour and soy flour and decided to try them as substitutes to the hard bread flour they normally carried. Initially disappointed with the rising, they stretched and flattened the dough creating softness on the inside, crunchy on the outside and amazing flavour. Today, the modern-day Pinsa flour is made up of a special recipe of “Soy flour, Rice flour and soft wheat flour. Amazingly Pinsa flour has 80% hydration which is much more water content than any other finished Pizza Dough. When fully cooked the“Pinsa Romana” pizza base is easy to digest, has fewer carbohydrates and less fat. “48 Hours In The Making” describes the resting period which allows the dough to develop all the enzymes and gases delivering all the product features in which flavour takes priority.
