Class 119 Apricot Tea Loaf 6 oz chopped dried apricots 8 fl oz water 6 oz caster sugar 3 oz lard 1 1 /2 tsp ground cinnamon pinch ground cloves /2 tsp salt 8oz Wholemeal flour 1 tsp bicarbonate of soda 2 eggs beaten 2lb Loaf Tin oven 180oC 350oF Gas mark 4 Put the apricots into a saucepan with water, sugar, lard, spices and salt, bring slowly to boil, stirring and simmer gently for 5 mins. Remove from the heat and cool. Sift flour and soda into a bowl, add apricot mixture and eggs mix well. Pour into greased greased and bottom lined loaf tin.
