Assistens Cemetery (Danish: Assistens Kirkegård) In medieval times intramural interment was the rule although outdoor graveyards gradually became more common. In 1666 the Naval Holmens Cemetery was moved to a site outside the Eastern City Gate (Østerport) as the first burial facility to be located outside the city. An outbreak of plague in 1711 put the existing burial sites under so much pressure that up to five coffins were sometimes buried on top of each other. This led to the establishment of five new cemeteries on the periphery of the city, but just inside the city walls. By the 1750s the situation had deteriorated further and the City Council proposed that a large new cemetery be built outside the city walls. After some negotiations it was decided to place it outside the Northern City Gate (Nørreport). The new cemetery was inaugurated in 1760. It was enclosed by a wall built by Philip de Lange. Originally the cemetery was intended as a burial ground for paupers. In 1785 an affluent citizen made a specific request to be interred at the cemetery. He was soon followed by other leading figures and the cemetery soon developed into the city’s most fashionable burial ground. During the Golden Age in the first half of the 19th century, many leading figures of the epoch, such as , Søren Kierkegaard, C. W. Eckersberg, and Christen Købke were buried here. Late in the 19th century, as Assistens Cemetery had itself become crowded, several new cemeteries were established around , but up through the 20th century it continued to attract notables. Among the latter are the Nobel Prize- winning physicist Niels Bohr and a number of American jazz musicians who settled in Copenhagen during the 1950s and 1960s, including Ben Webster and Kenny Drew. Assistens Kirkegård is a peaceful green space close to the city centre. Once the new Cityringen metro line opens in September with the new Nørrebro Runddel station, it will no doubt become even more popular. If you want to go for a walk, keep an eye out for the graves of Kjeld Abell, H. W. Bissen, Harald Bohr, Wilhelm Bähncke, Etta Cameron, Christoph Cloëtta, G.E.C. Gad, Ludvig Gade, Søren Gyldendal, Hugo Gyldmark, Inger-Lise Gaarde, C.F. Harsdorff, Henry Heerup, Henrik Hertz, Emil Hornemann, Thomas Koppel, Bamse Kragh-Jacobsen, Edvard Lembcke, Frederik L. Koldskål with Kammerjunker biscuits

Ingredients

Koldskål

• 1 litre/4 cups buttermilk the liquid kind, not thick • 150 ml/2/3 cup Greek or natural yoghurt • 2 egg yolks (pasteurized ideally) • 60 g/1/3 cup caster/granulated sugar • seeds from 1 vanilla pod/bean • zest from ½ lemon • freshly squeezed juice from ¼ lemon

Kammerjunker biscuits

• 150 g/1 cup plus 1 tablespoon plain/all-purpose flour • 1 teaspoon baking powder • 50 g caster/granulated sugar • 50 g/3 tablespoons butter • 1 egg • 1 teaspoon vanilla • 1/4 teaspoon ground cardamom optional • zest from ¼ lemon • 2 teaspoons single/light cream

Koldskål

1. On high speed, whisk egg yolk and sugar until white and thick. Add the vanilla and lemon zest, then the yoghurt and start to add the buttermilk whilst continuously whisking. 2. Add lemon juice to taste – the soup should be sweet but have a good lemon flavour coming through. 3. Serve the cold soup in bowls, topped with strawberries and Kammerjunker biscuits.

Kammerjunker biscuits

1. To make the biscuits, combine the flour with the baking powder. Add the cold butter, cubed, and mix in until you have grainy consistency. Add the sugar, then the other ingredients and mix again until you have an even dough. 2. Leave to chill for 20 minutes before rolling the dough. 3. Turn the oven to 200 degrees C 4. Roll the dough out and cut 35-40 small pieces, roll them and place on a lined baking tray. 5. Bake for 7-10 minutes, depending on your oven. Remove from oven and cut each biscuit across the middle so you end up with two flat halves. Return to the warm oven and leave them to finish baking, at 170 degrees, for 8-10 more minutes OR until golden and crisp.

Notes

Tip This soup should be eaten on day of making it as it contains raw egg. However, if there’s ever any leftovers at home, I use the this mixed in with a fresh fruit smoothie the morning after: It’s delicious. Recipe is taken from the ScandiKitchen Cookbook by Bronte Aurell, published by Ryland Peter and Small, photography by Pete Cassidy.

Participation – new ideas – new muscle

Many of the current committee members have been on the committee for more than 10 years and we need new members to help keep the club going and maintain our Danish traditions and long history in Queensland.

Over the past years we have undertaken a complete renovation of our great club house and now have the perfect basis for developing new activities for the benefit of all members.

If you have ideas for new events or uses for the club, one-off or regular, come forward and join the committee and be the person developing and managing that event with the support of the committee.

Remember the committee and other volunteers are doing this for a bit of fun and it is a great environment to work together in.

The club needs your support now!
