Mercer has a Ph.D. in Chemical Engineering and is a Registered Professional Engineer in the Province of Ontario, Canada. He is an associate professor in the Department of Food Science at the University of Guelph and is a Fellow of the International Academy of Food Science and Technology. Dr. Mercer’s studies of mango preser - vation and product development efforts occurring in Malawi in 2008; followed by food drying projects in Africa, Central America and the Caribbean. His activities included designing solar dryers and investigating various aspects of food dehydration at his home in Canada. Merchant contacted Mercer last year and the two agreed to organize and present workshops as soon as arrangements could be completed.
