Simpson4* Abstract Background: The aim of the study was to identify and compare components of the COM-B (capability, opportunity, motivation and behaviour) model, that influences behaviour to modify dietary patterns in 40–55-year olds living in Northern Ireland (NI) and Italy, in order to reduce the risk of cognitive decline in later life. Methods: This was a qualitative study examining factors influencing Mediterranean-DASH (Dietary Approaches to Stop Hypertension) Intervention for Neurodegenerative Delay (MIND) diet behaviour. This study further elaborated the COM-B components into the 14 domains of the Theoretical Domains Framework to further understand behaviour. Twenty-five Northern Irish and Italian participants were recruited onto the study, to take part in either a focus group or an interview. Participants were both male and female aged between 40 and 55 years. Results: Thematic analysis revealed that the main barriers to the uptake of the MIND diet were; time, work environment (opportunity), taste preference and convenience (motivation). Culture (motivation), seasonal foods and lack of family support (opportunity) to be a barrier to the Italian sample only. The main facilitators reported were; improved health, memory, planning and organisation (motivation) and access to good quality food (opportunity). Cooking skills, knowledge (capability) and heathy work lunch (opportunity) reported as a facilitator to the Italian sample only. Conclusions: Cross-cultural differences in relation to psychosocial barriers and facilitators were found in both samples. More barriers than facilitators towards uptake of the MIND diet were found. There is a need for interventions that increase capability, opportunity, and motivation to aid behaviour change. The findings from this study will be used to design a behaviour change intervention using the subsequent steps from the Behaviour Change Wheel. "Growing and compelling evidence from large longitudinal studies and randomized trials suggests that diet matters for brain health," says Alberto Ascherio, MD, DrPh, professor of nutrition and epidemiology at the Harvard T.H. Chan School of Public Health and professor of medicine at Harvard Medical School. "But a lot remains to be discovered," he adds. "We need studies that also take into account existing diseases, neurologic and otherwise, as well as lifestyle, environment, physiological characteristics such as age, sex, and body mass, and genes. Because Alzheimer's, Parkinson's, and other neurodegenerative diseases develop over decades, maximal benefits will require early and prolonged dietary changes." The MIND diet aims to reduce dementia and the decline in brain health that often occurs as people get older. It combines aspects of two very popular diets, the Mediterranean diet and the Dietary Approaches to Stop Hypertension (DASH) diet. A lot of research has been done to establish that the DASH and Mediterranean diets are the healthiest we could choose. Only a few epidemiological studies have been published on the MIND diet, with their main findings showing that adherence to the MIND diet is associated with a reduced risk of Alzheimer’s disease. Here’s what Mayo Clinic has to say about it: “The research is in: Eating certain foods (and avoiding others) has been shown to slow brain aging by 7.5 years and lessen the chances of developing Alzheimer's disease. This isn't some trendy diet of the moment. Born as a hybrid of two existing eating styles with decades of research at their backs — the DASH diet and Mediterranean diet — university researchers developed the MIND diet to emphasize foods that impact brain health.” There are no real specific guidelines as far as how many servings to get of each of the categories, but Kim McClintic shared those guidelines for the DASH diet. The heart of the complication lies in the fact that human beings are mainly driven by sensory properties detectable in foods which might not always lead to healthy food choices since we are naturally drawn to sweet taste, salty taste, and foods that are calorie-dense. This interdisciplinary dissertation aims to promote healthy eating through the knowledge of “Healthy Deliciousness”—the intersection of healthiness and deliciousness. A corpus of 1,200 online reviews of the 48 most popular restaurants in Hawaii, from a leading social media site Yelp.com, was content analyzed. Each review was organized into quotes so a point on the continuum of healthiness, a point on the continuum of deliciousness, and various components of each menu item—both directly and indirectly related to healthiness or deliciousness—could be coded. I identified 11 main categories of healthiness, seven main categories of deliciousness, and nine main categories of “Healthy Deliciousness.” Main categories of healthiness include Ingredients and Nutrition; Senses of Health; Health-Related Cooking Methods and Seasoning; Health- Related Thoughts, Behaviors, Habits, and Lifestyles; Food Hygiene; Wellness; Literal Healthiness; Portion; Unhealthy Celebration; Healthiness that Touches the Heart; and Personal Signature of Healthiness.
