Mini Muffaletta Sandwiches 8 Servings
Ingredients Directions 1 large round of your favorite sourdough 1. Slice the bread in half horizontally, and remove enough of the bread (unsliced) doughy insides to make room for the fillings. 1 cup Creole Olive Tapenade (recipe below) 8oz genoa salami, thinly sliced 2. Spread about ¼ cup of the olive salad and its oil on the bottom 8oz Capicola, thinly sliced and top pieces of bread, spreading to saturate the bread with oil. 8oz sharp provolone, thinly sliced Creole Olive Tapenade: 3. Layer the bottom bread with the meat, cheese, and remaining ½ cup pitted brine-cured black olives, olive tapenade. such as Niçoise, sliced 4. Cut into 3'' squares and wrap tightly in plastic wrap. ½ cup large (queen) pimiento-stuffed olives, sliced 5. Let sit for 30 minutes for the flavors to marry and the oil to soak ¼ cup extra-virgin olive oil into the bread. 1 teaspoon minced garlic 1 teaspoon freshly ground black pepper 6. Unwrap and serve. ¼ Tablespoon Capers 4 Filets of anchovies Creole Olive Tapenade: ¼ cup Parmesan cheese Combine all the ingredients in a medium mixing bowl and mix well.

Ingredients Directions 1 tablespoon fresh lemon juice 1. Place tomatoes with juice, green onions, ½ cup broth, 1 28oz canned tomatoes in juice Worcestershire sauce, horseradish, celery salt, and 2 green onions, chopped 1 tablespoon lemon juice in blender. ½ cup vegetable broth 2 tablespoons Worcestershire sauce 2.
