They would sit there for hours, chatting about the house being built around them – their house, and bask in the view of the ocean that they were enjoying, hoping that it would be as incredible as it was then, from every window of the soon to be complete No. 97 Kingfisher Boulevard.

Upon reflection, that same spot where they sat soaking in the peace and tranquility is most likely in the scullery of their incredible home now, and just about the only space in the house that doesn’t have an exquisite unobstructed eye across the Brettenwood vista; over the forest and straight into the Indian Ocean. To Serve the Mussels: Ingredients: 1 Baguette, cut into thick chunky slices 50gr Salted Butter, to butter the bread slices RIO LARGO Olive Oil ORYX Flaked Salt 25gr Fresh Fennel or Dill

Method: 1. In a frying pan heat the olive oil, place the bread buttered side down into the oil, sprinkle with the flaked salt and allow the bread to shallow-fry in the oil. Turn around, to fry the bread on both sides, until golden and crispy. Place on a side plate. 2. Place the mussels in a large serving bowl. Garnish with the fresh fennel or dill and freshly ground black pepper.
