Half Way Tree Authentic Jamaican Cuisine & Rumbar Welcome to Half Way Tree! We do our best to recreate the true taste & vibe of Jamaica. We are named after a famous location in Kingston, Jamaica where “uptown” meets “downtown.” The area originally got its name from a huge cotton tree that dominated the landscape until 1866. The tree was a major meeting point for travelers and traders coming to and from Kingston, Spanish Town, St. Thomas or St. Mary, who would stop to refresh themselves at one of the pubs or to haggle with other vendors. Today, even though the tree is gone, the junction is still a major transit point for commuters. We started our restaurant in January 2013 and in just 8 short months we built up a tremendous reputation for our authenticity, and even won “Best of Rhode Island” from Rhode Island Monthly Magazine. Sadly, we were left homeless, as our original location is being demolished. We now return with the same authentic Jamaican staff that helped build Half Way Tree from scratch.     J E N N ’ S N O - F U S S J A M A I C A N H A R D D O U G H B R E A D Ingredients: 4 Tbsp. Cane Sugar 2 Tsp. Instant Dry Yeast 2 Lb. Bread Flour (Roughly 6 Cups) 6 Tbsp. Unsalted Non-dairy Butter (Cut Into Small Chunks) 2 C. Lukewarm Water 6 Tbsp. Lukewarm Water 1 Tbsp. Kosher or Sea Salt Directions: In Kitchenaid bowl, combine flour, yeast, and sugar. Add butter. Use the tips of your fingers to rub the butter into the flour until it starts to look like breadcrumbs. (Coating the butter in flour will give the bread a nice, flaky crust. The fat will also shorten the fibers of the flour, which helps to prevent the flour from forming into one big glob. You can also use a pastry cutter or the paddle attachment on your stand mixer to achieve the same thing.) Using dough hook, start mixer with dry mix. Add water. Allow to combine for a few seconds. Then add salt. Mix for 4 minutes. Form into a ball. Lightly grease dough and bowl with oil. Cover with a clean cloth and allow to rise for 45 minutes. Remove dough from bowl. On a lightly oiled surface, punch dough to remove excess carbon dioxide. Divide dough into two. Flatten dough by hand or with a rolling pin into a rectangular shape. Using your hands, tightly roll the dough to form a log shape. Transfer dough to the oiled bread pan. Allow to rise a second time until it has doubled its size.
