W e ha ve es tablished the k ashrut policies and guidelines belo w which include tw o diff erent s tandards of k ashrut adher ence in an a empt to appeal t o the halakhic norms of a wide v ariety of people/ opinions.

● To ensur e tha t e veryone c an ea t a t all of our e vents, our Beit Shalom kit chen adher es t o secon A s tandards and the Beit Shalom kit chen or JCM cerfied kit chens (see belo w) are used f or pr eparing a sub stanal poron of or all of our on-sit e and lar ge e vent f oods.

● Members c an ha ve their kit chens cerfied t o secon A s tandards. The y c an be cerfied for baking and c old it ems only or f or all c ooking. T o ha ve y our kit chen cerfied please contact the Ex ecuve Dir ector.

● If an e vent includes both Secon A and Secon B f oods (as in the c ase of a potluck or a ) separ ate t ables ar e se t up (and labeled) so tha t people c an choose acc ording t o their per sonal hashk afa.

● Secon A hot f oods c an be r eheated in the Beit Shalom kit chen and Secon B hot f oods can be r eheated on the hotpla te pr ovided.

● Secon A f ood c ontainers c an be w ashed in the sink in the kit chen and Secon B f ood containers c an be w ashed in the outside sink pr ovided.

An y per sonal f ood c ontainers f ound le in the f acility will be placed in a los t and f ound bo x near the office and periodic ally thr own out. Please r espect the in tegrity of our k osher f acility b y adhering t o these s tandards.

What You Need to Know in a Nutshell

● Not all f ood needs t o ha ve a /k ashrut cerfic aon in or der t o be c onsidered kosher. The ‘K ashrut St andards f or Pr oducts’ lis ts belo w ar e mean t t o help y ou understand wha t kind of f oods y ou c an bring without needing t o check tha t ther e is a kashrut cerfic aon on the label and which pr oducts r equire a hechsher . Look belo w f or guidance on ho w t o pick pr epared k osher f oods:

Hechshers/Kosher cerfic aon s ymbols

The “K” s ymbol is not tr ademarked and is not a s ymbol f or a specific cerfic aon authority. Ther efore, a “K” on the pack age is not sufficien t t o cerf y tha t the ingredients and manner of pr eparaon ar e actually k osher. When ther e is a “K” , check with the Rabbi or a K ashrut Super visor t o see if the “K” has a pr oper

● All c ooked f oods need t o be c ooked in the Beit Shalom kit chen or in a cerfied kit chen as hot f oods o en necessit ate mor e c omplicated k ashrut rules and it w ould be t oo difficult t o se t one c ommunity s tandard. If y our home kit chen is not cerfied, y ou ma y bring y our o wn k osher ingr edients, in a disposable or appr oved ne w c ontainer, t o be cooked in the kit chen but please ha ve the ingr edients lis t appr oved ahead of me b y the Execuve Dir ector, the Rabbi, a Kit chen Manag er or a K ashrut Super visor in or der t o double check tha t the y ar e within our ‘ secon A ’ k osher s tandards. Kashrut Standards for Products

The f ollowing pr oducts do not need a hechsher in or der t o be br ought in to the Beit Shalom kitchen or used t o pr epare ‘ secon A ’ f oods in a cerfied kit chen. This lis t is not all inclusiv e - for ques ons c oncerning f oods not on this lis t c ontact the Rabbi or a K ashrut Super visor.

● Raw ingr edients: Pur e unc ooked, unpr ocessed f oods/ingredients do not r equire a hechsher/ k ashrut cerfic aon (not including mea t).

This lis t includes: Fr esh or r aw fr ozen fruits & v egetables (r ead the label t o mak e sur e there ar e no added ingr edients - citric and asc orbic acid ar e ok), eg gs, salt, sug ar, flour , pure spices, unbr ewed t ea, pur e v egetable oil (oliv e, c oconut, a vocado, sesame, macadamia nut e tc), c offee beans, un flavored gr ound c offee, c ocoa po wder, lemon/lime juice, so drink s, , 100% juice (added asc orbic acid and citric acid ar e ok), cr eam, buer, gr ains, dried unc ooked beans, nuts (r aw or dr y r oasted), (r aw or dr y roasted), r aw superf ood po wders, rice, baking po wder, baking soda, flour , c orn s tarch, vinegar, domes c beer and mos t har d alc ohol.

● Processed and pr epared f ood: All c ommercially pr epared f oods (including c anned, frozen, bak ed, c ooked e tc. - i.e. f oods other wise chang ed fr om their na tural s tate) such as br ead, pas ta, cr ackers, cer eals, dip s, sauces, salad dr essing, as w ell as pr ocessed dair y products with addiv es such as y ogurts e tc. mus t ha ve a hechsher/ k ashrut cerfic aon. [We r equire this as it is t oo challenging t o tr ain e veryone in ho w t o r ead labels and choose k osher pr ocessed it ems.]

● Wine/Grape juice: Wine or gr ape juice t o be used f or kiddush or other ritual use mus t have a hechsher/ k ashrut cerfic aon. [This s tance has been adop ted in or der t o be inclusiv e of all types of ob servance. In general w e hold tha t ther e is no issue of Yayin nesech 3 nor e ven Stam yainum 4 in the commercial and gr ape juices a vailable t oday so a mor e r elaxed s tance has been taken on wine and gr ape juice ser ved f or social e vents.]

General Kitchen Rules

Anyone who wishes t o help c ook, pr epare, se t up or clean up in the Beit Shalom kit chen c an be cerfied in one of the f ollowing r oles or c an w ork dir ectly under the super vision of one of the following (Super vision shall e xtend thr ough the clean-up period):

1. Kitchen T eam Leader s: This t eam is tr ained in our kit chen pr ocedures b y a another Kitchen V olunteer, a Kit chen Manag er, or the Ex ecuve Dir ector. The y c an pr epare cold f ood, se t up, clean up, put a way f ood in the kit chen and super vise other s t o help them. If ther e is a ques on as t o pr oper pr ocedure a Kit chen Manag er should be contacted. F or specific k ashrut r elated ques ons, the Rabbi or a K ashrut Super visor should be c ontacted.

2. Kitchen Manag ers: This t eam is tr ained b y the Ex ecuve Dir ector or another Kit chen Manager in all our k ashrut and kit chen policies including ho w t o s witch the kit chen

3. Kashrut Super visors: P ersons on this t eam mus t be w ell v ersed in the of kashrut and be cerfied b y the Rabbi or the Spiritual Lif e Chair . The y ar e tr ained t o answer ques ons r elated t o all our k ashrut and kit chen policies. K ashrut Super visors have access t o the kit chen k ey lockbo x. In c ase of disagr eement be tween K ashrut Supervisors or if a K ashrut Super visor is unsur e, the Rabbi or the Spiritual Lif e Chair should be c ontacted.

General Beit Shalom Kitchen Use

Unless the kit chen is “ switched o ver” t o mea t f or a special e vent or holida y b y the Ex ecuve Director or a Kit chen Manag er, our kit chen is a dair y kit chen. A chang eable Mea t or Dair y sign is on the door of the kit chen.

When scheduling kit chen me please specif y which kind of f ood y ou plan t o pr epare .(including poultr y ,/ ְבּ ָשׂ ִר י or fleishig /meat ,חלב י /milchig/dairy)

● Ingredients br ought in to the kit chen f or pr eparaon mus t be appr oved b y the Ex ecuve Director, a Kit chen Manag er, the Rabbi, or a K ashrut Super visor. ● Utensils, v essels, or c ontainers br ought in to the Beit Shalom kit chen f or use mus t be new (ie ne ver used) or appr oved b y the Ex ecuve Dir ector, a Kit chen Manag er, the Rabbi, or a K ashrut Super visor. ● Dishes c ooked in a cerfied kit chen ma y be br ought in to the kit chen and r eheated in the Beit Shalom o ven. or ,חלב י /Only one kind of , depending on kit chen s tatus, (milchig /dairy ● including poultr y), is pr epared a t a me in the kit chen and/ or ,/ ְבּ ָשׂ ִרי fleishig/meat served a t e vents. and par eve (neutr al) ut ensils, v essels and ,( ְבּ ָשׂ ִר י / mea t (fleishig ,( ֲח ָל ִב י / Dairy (milchig ● containers ar e mark ed and k ept in separ ate ar eas in the kit chen. neutr al – c ontaining no mea t and no dair y, includes fish) f oods ma y be) ַפּ ְר ָו ה / ● prepared and ser ved with either type of meal. ● Tevilat K eilim/ immer sion of ne w dishes will be done on me tal and glass ut ensils (without a br acha) in the ocean unless the y w ere pr oduced in Isr ael. ● All c ooking f or a meal t o be ser ved on Shabba t mus t be c ompleted be fore Shabba t begins. This is de fined as sunse t or when c andles ar e lit in the s ynagogue.

● For Sa turday or pos t-Chag5 nigh t e vents c ooking mus t be done either be fore /Chag begins (see abo ve) or a er the Shabba t or holida y is is out. This is de fined as 42 minut es a er sundo wn or when “thr ee s tars in one place” can be seen, ie thr ee s tars (not plane ts) c an be seen in the sky without mo ving one’ s head. ● Leovers tha t ar e dair y fr ee, glut en fr ee, gr ain fr ee, nut fr ee, sug ar fr ee e tc should be appropriately mark ed and le overs fr om mea t mus t be clearly mark ed “fleishig/meat” be fore the y ar e placed in the r efrigerator or fr eezer. Shabba t friendly labels ar e pr ovided f or use on Shabba t and Chag.

Oven/Stovetop/Counters ● The o ven ma y be used f or only one kind of f ood a t a me ie either mea t (including poultry) or dair y – depending on kit chen s tatus. ● Pareve (neutr al – c ontaining no mea t and no dair y, including fish) f oods ma y be c ooked in the o ven with either milk or mea t f ood but the y then t ake on the s tatus of either milk or mea t f or le overs. ● Preparaon ar eas, surf aces and s tovetops ar e t o be cleaned a er use b y wiping do wn with the a vailable cleaner s or wipes. ● Oven spills should be wiped up as much as possible.

Pesach/Passover

The kit chen will be k ashered f or P esach be fore the holida y b y hir ed help and/ or v olunteers supervised b y the Rabbi or the Ex ecuve Dir ector. Only k osher f or P assover f oods will be used during the holida y w eek.

B)Secon B Community Kashrut Standard: Kosher pescatarian, vegetarian, vegan or dairy Only f ood tha t mee ts the minimal k ashrut s tandards of no mea t, shellfish, non-k osher fish, or by-products ther eof ma y be ser ved a t or br ought t o JCM sponsor ed e vents. This is import ant as we do not w ant t o e xclude those who k eep k osher fr om a ending e vents.

Some special things to be aware of:

1. Many pr emade pie crus ts and pies fr om loc al bak eries include lar d as do some c ake and corn br ead mix es. Check the ingr edient lis t f or lar d! 2. Did y ou kno w tha t some chip s, especially barbecue fla vor, c ontain chick en f at? R ead the ingredient lis t! 3. Did y ou kno w tha t some Thai curr y pas tes ar e made with pas te? Check the ingredient lis t f or shrimp or shrimp fla vor! (Shrimp fla vor has shrimp e xtract in it and there ma y be shrimp in fish s tock or sea food fla voring.) 4. Companies ar e r equired t o label an y pr oduct tha t c ontains shellfish or other f oods tha t oen c ause aller gic r eacons, but the r egulaons don't apply t o mollusk s, such as clams, and sc allops. R ead the ingr edient lis ts! 5. Most fr ench fries and onion rings fr om loc al r estaurants ar e deep fried in the same oil as shrimp. Ask be fore pur chasing! 6. Bugs ar e not k osher! Pr ewashed and h ydroponic gr eens, e tc. c an be used without special w ashing but please c arefully clean all other gr eens and har d t o w ash or commonly in fested f oods (lik e herb s) t o ensur e ther e ar e no bugs tha t c an be seen b y the nak ed e ye. 7. Vibrantly c olored r ed f oods or drink s o en include na tural r ed #4, a dy e made fr om the dried shells of the c ochineal bee tle which is used in a purified f orm in c ommercial f oods. This is a k ashrut issue. If y ou ar e pur chasing some thing r ed (lik e some Y oplait y ogurts) please check the ingr edient lis t f or c armine, crimson lak e, c ochineal or na tural r ed #4. Plant-based dy es lik e ly copene and an thocyanin ar e v egetarian and ther efore not a problem. 8. We lo ve hone y - but royal jelly is not k osher bec ause it is secr eted fr om the bee, which is an unk osher animal. 9. Wine or gr ape juice t o be used f or kiddush or other ritual use mus t ha ve a hechsher/ kashrut cerfic aon as man y people ar e s tringent on this issue. If y ou ar e bringing gr ape juice or wine f or r egular drinking purposes it does not need t o be cerfied.
