The History of Hofbräu by Judy Zehnder Hofbräu is a brewery that is owned by the State of Bavaria in the country of Germany. It is perhaps the only brewery in the world that is owned and operated by a government. Hofbräuhaus comprises the brewery, its famous restaurant and drinking hall located in Munich, Germany. Originally, Hofbräu was owned by the king of Bavaria. It was the brewery for the royalty of Bavaria and their staff. Later, ordinary citizens and working people were allowed to buy beer from this brewery. It became a source of income for the king. In 1852, Maximillian II sold the brewery to the government of Bavaria. The different kingdoms in Germany were later united by Otto Von Bismark and Kaiser Wilhelm I during the late 1860’s. Hofbräu beer remained under the ownership of the government of Bavaria. There was a period of over 60 years when Hofbräu beer was not available in the United States. The last shipment came into the United States in 1936 as blockades and other pre-World War II issues put a stop to all German imports. It was not until 1997 when my husband, Don Keller, contacted Hofbräu in Munich that this changed. The vast majority of our guests knew of the Munich Hofbräuhaus and so we thought we should serve this beer. Don had months of correspondence with Hofbräu officials. All the letters were written in German to us and we needed a translator who was familiar with German exporting and importing. Fred Schumacher, originally from Germany, who resided in Frankenmuth, worked with Don on the American side. Hofbräu’s C.E.O., Albert Riedl, and Export Manager, Maximillian Erlmeier, were the principles involved on the German side. There were many hurdles to overcome as German liquor laws are very different from American liquor laws. We could not buy directly from Hofbräu. The distributor selected to do the actual importing was a Saginaw, Michigan firm owned by the Riffel family. This third generation family business (C. Riffel & Sons) had been supplying our Bavarian Inn family business for over fifty years. Fred Schumacher pours a Hofbrau beer at the Lorelei Lounge inside the Bavarian Inn Lodge. When Fred started working on the import license with Dick Riffel, they soon realized Hofbräu did not have a registered name in the United States as they had not conducted business here for over 60 years.

From the Nez Perce National Historic Trail website Food and Drink Fish were an important food for Indian families. They were caught in many different ways. Some tribes made hand-knotted nets, both large and small. Some of the tribes in the Pacific Northwest still fish with large dipnets, from a platform built up above the edge of the riverbank. Others use a seine net (pronounced “sayn”) to catch many fish at once. Some tribes made a fish trap from sticks. Others built dams with rocks, dirt, and fallen trees; they would then scoop the fish from the water with baskets. The Nez Perce and other tribes picked and ate many kinds of wild berries—strawberries, blueberries, wild grapes, huckleberries, serviceberries, currants, cranberries, and many more. Researchers have found there were 36 different kinds of fruit that Indians dried to eat in the winter. They knew what the plants looked like, where they grew, and when they got ripe every year. Berries were carried home in baskets and eaten fresh, but they were also dried and saved for winter. Huckleberries and other berries—such as serviceberries and currants—were often used by the Nez Perce to make a staple food called pemmican. Meat is sliced very thin, then dried, and then pounded or ground with stones to a dry powder. Chopped dried berries are added to the powdered meat, and then melted fat (such as deer fat or buffalo fat) is mixed in.

Once mash is complete begin to recirculate the wort by drawing it off the bottom and returning it to the top of the mash-tun, while not disturbing the grain near the false bottom.

Located in the emerging brewery district in the Underwood Hills neighborhood in the Upper Westside of Atlanta, the brewery consists of two stories totaling 26,000 sq. ft. of space in a building previously occupied by Zep. “Our vision at Round Trip Brewing Company is to welcome the community to enjoy world- class beer in a dynamic space that encourages exploration and camaraderie,” said Craig Mycoskie, CEO and Head Brewer at Round Trip. “We have dreamed of opening our own brewery for a long time but started this journey in earnest a couple years ago. To see our hard work start to take shape is truly rewarding.” The facility will include a taproom, brewhouse, event space, packaging hall, and an adaptable outdoor area. The taproom allows up to 250 guests to enjoy twelve beers on tap. Custom-made tables and benches built by Broken Fence Woodworking provide a comfortable communal environment for people to enjoy the beer. Round Trip selected companies with specific expertise and an intimate knowledge of the Atlanta beer industry to bring the vision of the brewery to life. Round Trip worked closely with Probrew to outfit a custom three-vessel 15-barrel brewhouse. Additionally, Round Trip has 30-barrel fermenters for double batches and 7- barrel tanks for one-off tap room creations.
