Südsdssteiermmaark 12 VIENNESE “SCHNITZEL”, VEAL ESCALOPE WITH POTATO SALAD

Ingredients (to serve 4) The original Viennese veal escalope is traditionally deep fried in pork lard, and this crispy breadcrumbs demands a structured, crisp wine. q 4 veal schnitzel The original Viennese “Schnitzel” escalope derives from the Costoletta alla Milanese in Lombar- (escalopes) dy. The veal meat is usually cut from the fillet end of the leg, and is fried in pork lard, rather than each approx. 140g butter. The lard gives the dish its unique taste and is highly resistant to heat, that incidentally q 60g wheat flour produces little trans fats. Veal “Schnitzel” that is deep fried in butter fat have an individual, quite q 2 eggs intense taste. The taste is more neutral when using sunflower or olive oil. q 80g breadcrumbs Method: Beat the veal to approximately 4-6 mm, and add salt to both sides. Remove the skins, q 200g lard as to avoid it crinkling during frying. Place three soup bowls next to each other, and put the flour q salt into the first. Whisk the egg white and yolk from two eggs into the second bowl and place the breadcrumbs into the third. Breadcrumbs: Dip both sides of the escalope into the flour, and beat gently, as only to leave a very thin layer of flour. Then dip both sides of the escalope into the egg mixture, and allow the excess mixture to drip off before doing the same with the third bowl of breadcrumbs, and gently dry. Brush off excess breadcrumbs. The escalope is now ready to fry. Frying: Heat a 2-3 centimetre thick piece of lard in a large, flat frying pan. The temperature is very important, and if the lard fails to reach the desired temperature, the breadcrumbs will be fatty and soggy, and if the fat is too hot, then the breadcrumbs will burn. Lay the prepared escalopes next to each other into the hot lard and fry each side for approximately 1½ – 2 minutes. Gently toss the pan, so that the escalopes swim in the fat and the breadcrumbs and rises. Serving: Remove the crisply browned escalopes from the pan and dab dry with kitchen roll, and place them onto a warmed plate. (Note that a dripping Viennese escalope is a sacrilege! Serve with a wedge of fresh lemon and ideally parsley potatoes. A salad is obligatory, the Viennese cold potato salad with lettuce or mixed leaf salad. 13 Gasthaus Martin Weiler

Domäne Wachau use the historic building for diverse purposes, most recently as wine archive and tasting facility. A complete interior renovation in 2006 now boasts bright frescos, restored plaster reliefs and murals. Every detail is dedicated to the famous wines of the Wachau, which are sometimes portrayed in serious, sometimes in humorous manner. The Cellar Palace art collection is particularly known for its copper plates and drawings, which have also been restored and can be viewed by the public. The Cellar Castle facilities offer a unique atmosphere that can be rented for holidays, presentations, and tastings throughout the year.

Domäne Wachau’s Cellar Palace is an attractive baroque land- mark of the region, planned and built by Jakob Prandtauer from 1714 to 1719. The small baroque chateau is nestled in the Wachau vineyard slopes and its picturesque setting lures visitors and hikers to pause for leisure. The palace originally served as an entertainment residence for Hieronymus Übelbacher, Apt of the Dürnstein Abbey, who was an enthusiast of the wines of Wach- au.
