(1 stick) unsalted butter, cut into roughly 1/2 inch cubes 3 c. all-purpose flour 1 1/2 c. buttermilk 2 c. fresh blueberries (or frozen and thawed) Topping: 1/4 c. sugar SNACKS zest of 1 lemon 1 egg + a splash of cream or milk Instructions In a large bowl, whisk together pastry flour, baking powder, baking soda, salt and sugar and toss in your cubed butter. Put this mixture in the freezer for about twenty minutes, or until the butter is solid. & Once your butter is frozen, throw the butter/flour mixture into the bowl of a food- processor and pulse until the butter is in pea-sized chunks. Throw this mixture back into the large bowl it was formerly in and sift in your 3 cups of all purpose flour, tossing the mixture gently until the butter is uniformly spread throughout the flour. -

BREAKFAST TOAST, 6 WAYS I’ve always eaten toast—who hasn’t?—and I’ve always put sweet and savory stuff on it. So I’m glad to see this “trend” now qualifies as true breakfast. It’s convenient and obviously much better for you than even the best store-bought sweets. Especially when you use whole grain bread, which I advocate. A toaster is easiest and best when your additions are fine unheated, like yogurt and mashed avocado. But if you want to warm the topping, you’ve got to fire up the broiler or toaster oven: For the best texture, toast the bread on one side, turn it over, add whatever you like (not a ton, just a smear and maybe some fruit) then put it back under the heat to brown. Here are a few ideas, some simple and some more involved. Cinnamon Toast After turning, smear liberally with butter and sprinkle with equal parts cinnamon and sugar. Return to the broiler until browned. Honey-Chile Toast Same as above, only the topping is equal parts butter and honey, spiked with salt and Aleppo or other ground mild chile. Elvis Toast After turning, spread with peanut or other nut butter and top with thin banana slices. Return to the broiler to brown. Fresh Cheese Toast Brown one or both sides and spread with ricotta, cottage cheese, or goat cheese and top with chopped fresh or dried fruit. Return to the broiler, or not. Welsh Rarebit Mix Mornay (Cheese) Sauce (that’s béchamel sauce with grated cheese stirred in) with a dash of Worcestershire sauce and dry mustard. -

Carbohydrate Counting for Traditional South Asian Foods Ashwini Wagle, M.S., R.D, Doctoral Student Associate Professor and DPD Director Department of Nutrition, Food Science and Packaging San Jose State University Preface The Carbohydrate Counting tool was developed to meet the needs of the South Asian population and is an original intellectual product of the author, Ashwini Wagle, MS, RD, Associate Professor and DPD Director, Department of Nutrition, Food Science and Packaging at San Jose State University. The 4th edition and revised version was developed by the main author with assistance of Tanay Prabhu, BS Student in Biological Sciences, Drexel University, Philadelphia. The previous versions of the tool were developed with the assistance of graduate students Sajida Arsiwala, MS, RD and Bhavna Subhedar, MS and Dr. Kathryn Sucher, Sc.D, RD, Professor Emeritus, Department of Nutrition, Food Science and Packaging at San Jose State University. About the Author Ashwini Wagle, MS, RD is an Associate Professor and Director for the Didactic Program in Dietetics (DPD) in the Department of Nutrition, Food Science and Packaging at San Jose State University. Ashwini Wagle earned her MS in Food and Nutrition from Indiana University of Pennsylvania (IUP) in 93'and is currently a doctoral student in Educational Leadership (Ed.D) at University of New England. She comes to San Jose State University with over ten year experience as a registered dietitian (RD) in several skilled nursing facilities and acute care hospitals in the San Francisco Bay Area. Ashwini Wagle is also involved with several on-campus and off-campus organizations and serves on the committees for organizations such as the South Asian Heart Center at El Camino Hospital, Center for Healthy Aging in Multicultural Populations (CHAMP), Education Committee of the California Dietetic Association (CDA), San Jose Peninsula District of California Dietetic Association (SJPD), Cal-Pro Net Center.
