fed to dairy govts. No two experiments were exactly alike in design or in the rations fedj rather, each experiment devel­ oped from and was designed to answer some of the problems raised by the results obtained from the preceding experiment. For this reason it was not possible to follow the customary outline of a thesis. Instead, each experiment has been considered as a problem to be discussed separately. The development from one experiment to the next has been shown in the introductions to the individual experiments, and wherever possible the results of two or more experiments are combined for discussion. Finally, there is a brief discussion of the problem as a whole. 9 PAET I Soybeans and Silage as a Complete Sation for Dairy Cows* Introduction In recent surveys of Iowa (67^ 78) it ms fotmd that more than half of the farms in the state were operated by tenants, and that on, the aver­ age a tenant stayed on one fam less than three years' time. With such a system of farming the growing of legume hay is difficult; on the other hand, large quantities of corn are grown, and some of this could easily be cut and stored as silage. Also, on owner operated farms com silage is often the main roughage grown. If this roughage could be profitably utilized in large quantities by dairy cows without the necessity of bi:ying hay and concentrates, then the operator could distribute his labor more uniformly throughout the year and obtain a more regular income with less "robbing" of the soil than would be the case if he were to sell grain.

    SOY FREE DIET AVOIDING SOY An allergy to soy is common in babies and young children, studies show that often children outgrow a soy allergy by age 3 years and the majority by age 10. Soy products offer a considerable appeal for a growing segment of consumers with certain dietary and health concerns. It is quite evident that soy products do reduce the risks of developing various age-related chronic diseases and epidemiologic data strongly suggest that populations that regularly consume soy products have reduced incidence and prevalence of the aforementioned age-related conditions and diseases than populations that eat very little soy. The subject of what specific components is responsible for the plethora of reported health benefits of soybean remains a strong controversial issue, as the scientific community continues to understand what component(s) in soy is /are responsible for its health benefits. Soy constituents’ benefits mostly relate to the reduction of cholesterol levels and menopause symptoms and the reduction of the risk for several chronic diseases such as cancer, heart disease and osteoporosis. A variety of soy products are available on the market with different flavors and textures and a low-fat, nutritionally balanced diet can be developed from them. This article summarized the beneficial health, nutritional and functional properties of the soy ingredients and intends to illustrate the most current knowledge with a consciousness to motivate further research to optimize their favorable effects.

In human nutrition, fresh milk and dairy products are valuable sources of protein, fat and energy, and are an important part of daily meals. Most of the world’s milk produc- tion (85 %) comes from cows followed by buffaloes, goats, ewes, mares and donkeys. However milk related food allergies in infants may be a reason for health problems and may cause a decrease in milk. The objective of this paper was to give an overview of the overall composition of milk and fat from different species in comparison to women milk. Regarding the overall milk composition remarkable differences in energy content, fat, lactose, protein and ash of the various milks were found, but also some similarities among milk from ruminants and non-ruminants were detected. The structures of fat globule membranes were similar among non-ruminants and women milk, while the milk fat glob- ule structure in ruminants differed significantly. The size of fat globules was significantly different between species and highly correlated to the milk fat content, regardless of the specie.

    CHAPTER 1 INTRODUCTION 1.1 Background of Study Tempeh is a traditional fermented soybean food. It is a fermented food made by the controlled fermentation of cooked soybeans with a Rhizopus mould as the tempeh starter. The tempeh fermentation by the Rhizopus mould binds the soybeans into compact white cake (Tempeh 2009,25 June). It is made by cooking and dehulling of soybeans and inoculation with different strains of Rhizopus (R. oligosporus, R. oryzae, and R. stolonifer) which will lead to solid substrate fermentation (Steinkraus K.H., 1983). Fermentation also influences the content of desirable constituents such as vitamins, protein and fatty acids (Baumann U., 1995). Tempeh provides the staple food for a large population in Indonesia and Malaysia. Like tofu, tempeh is made from soybeans, but tempeh is a whole soybean product with different nutritional characteristics and also different textural qualities. Tempeh’s fermentation process and its retention of the whole bean give it higher content of protein, dietary fiber and vitamins compared to tofu, as well as firmer texture and also with stronger flavor. Because of its nutritional value, tempeh is used worldwide in vegetarian cuisine.
