Bunun başlıca nedenlerini; eğitim düzeyi, toplumun istekleri, maddenin durumu, artıkların zenginliği, aroma maddelerinin ucuzluğu, bolluğu ve çeşitliliği, teknolojik gelişmeler, halkın beslenme konusunda bilgilendirilmesi ve ekonomik koşullar olmak üzere 8 grupta incelemek mümkündür. Bu araştırmanın amacı, Türkiye’de dondurma tüketim alışkanlıklarının ve gelişme eğiliminin saptanmasıdır. Tüm Türkiye’yi temsil etme özelliği taşıyan İstanbul araştırma alanı olarak seçilmiştir. İstanbul 4 ana gelir grubuna ayrılarak örnekleme yapılmış ve 226 tüketici ve 113 perakendeci ile yüz yüze görüşmeler yoluyla anketler doldurularak orijinal veriler elde edilmiştir. Araştırma bulgularına göre, serinlemek için sudan sonra dondurmayı tercih edenler ikinci sırada bulunmuştur (% 22,17). Yaz aylarında dondurma tüketim sıklığı ise, % 41,59 ile haftada 2-3 kez, % 18,58 ile haftada 1 kez ve % 17,26’sının her gün olarak belirlenmiştir. Tüketiciler tarafından en fazla tercih edilen prestij ürünleri; Algida’dan Magnum ürünleri, Ülker Golf’ten Bravo ürünleri, Panda’dan Magic ürünleri olurken; en fazla tercih edilen çocuk ve genç ürünleri her bir markadan sırayla Max, Metro ve Stix ürünleri olmuştur. The main reasons are said to be educational level, community demand, quality and obtainable of raw material, richnes, of leftovers, cheapness of aromatic materials, level of knowledge about nourishing and economic situation respectively. The aim of this research is to be analyzed of consumer tendencies and developing process related with ice-cream. İstanbul was chosen as the research area which is the biggest metropol of Turkey. İstanbul was divided into four different regions by income level and using via questionnaires necessary data were collected out of 226 consumers and 113 retailers. According to the research results, the consumers’s preferences ice-cream demand is the second (22.57%) after the water during summer time for feeling coolness. The frequency of consuming was determined as 2-3 times into week 41.59% once 18,58% and daily 17.26% respectively. Magnum products by Algida, Bravo by Ülker, Magic by Panda are the main brands which have been demanded by the majority of the customers preferably. The ice- cream brands which have been demanded generaly by youthful and kids are Max, Metro and Stix respectively.     Butter Pecan Ice Cream, Vegan Makes 7, ½ cup servings Total time: 1 hour with ice cream maker 3-4 hours without ice cream maker Ingredients 1 Cup almond milk, split 2 Cups almond creamer 2 Tablespoons arrow root 2 Tablespoons non-dairy butter (Kroger sells this) ½ - ¾ Cup maple syrup 1 Teaspoon maple extract ¾ cup chopped raw or roasted pecans Preparation Dissolve arrow root in ¼ cup of the almond milk. Place the rest of the milk, creamer, maple syrup, non- dairy butter, and maple extract in a medium sized pot and bring to a boil, stir continuously. After mixture has boiled stir in the liquefied arrow root. The mixture will thicken. Remove from the heat. Place in freezer container and freeze for 3-4 hours until frozen. To shorten the time, I place the mixture into the freezer for 30 minutes to cool down, then pour it into my ice cream maker and let it churn for 30 minutes. Enjoy!
