Sourced from the Bassin de Thau, Picpoul country. It is predominantly Vermentino (60%) which gives the wine its core qualities of citrus levity. Terret (30%) gives the blend complexity and length. 5% each of and Viognier fills in the holes to make a completely satisfying dry white wine with some salinity. PRODUCTION

Immediately inland from the Mediterranean, between Bezier and Montpellier, lie the vineyards of the Côtes de Thau. These gently terraced slopes to the western shores of Lake Thau are particularly suited to ripening white grape varieties; for this wine Vermentino (Rolle), Terret (the traditional variety of the appellation), Viognier and Grenache Blanc. Cooling sea breezes moderate the fierce Mediterranean heat, while the presence of the Thau, an inland sea water lagoon, moderate the night-time temperatures allowing optimal ripening whilst retaining fresh acidity. To preserve the aromas are harvested early in the morning, gently pressed and fermented at cool temperatures.

TASTING NOTE

Aroma of white flowers, lime blossom and candied lemon. On the palate, the wine is textured with some exotic fruit such as kumquat and peach.

Take inspiration from the seaside cabins found along the shores of Lake Thau which serve fresh seafood, especially mussels and oysters.
