TASTING NOTES The 2013 Ferrari-Carano Eldorado Noir is a truly unique dessert wine made from Black Muscat grapes grown in Russian River Valley. This wine has a beautifully dark, viscous purple color, with sweet rose, fresh raspberry, Bing cherries, black raspberry and a hint of warm spice aromas and flavors that delight the palate. Nicely balanced with sweetness, the Eldorado Noir is in- tensely aromatic.
VINTAGE NOTES The Black Muscat grapes ripen slowly in the cool, foggy climate, reaching their full flavor maturity much later than other varieties of grapes. Overall, 2013 was a very good year with ideal weather conditions for the vines. Spring produced great set and average rainfall led to normal and above- normal yields. Consistently warm temperatures during the summer months without any drastic heat spikes or major rain events allowed for longer “hang time”, leading to fully ripe flavors.
WINEMAKER NOTES The grapes for this wine are left on the vine longer than other varieties in order to achieve a “late harvest” style, shriveling the ultra-ripe berries to 29 to 30 brix. Upon entering the winery, the hand-harvested grapes are destemmed, cold soaked for five days and then fermented in tank before gently pressing. Once fermentation is complete, the wine is drained and pressed to older oak barrels for malolactic fermentation and eight months of cave aging.
FOOD PAIRINGS The Eldorado Noir is exceptional paired with rich, decadent chocolate des- serts, as well as vanilla bean ice cream or bread pudding with plum or per- simmons. Fruit-based tarts, shortcakes, fruitcakes, pumpkin pie, pecan pie or baked apples also pair nicely with the Eldorado Noir.
