Dear friends, How can it be that we’re already at the start of another year? This is always an especially reflective time for me. I don’t often make New Year’s resolutions; instead, I write down a list of goals that I am looking forward to accomplishing. This year, I’m diving deeper into the goals I’ve set in the past: namely, to live each day with gratitude; to be in the moment; and to live a more mindful life. I also want to do more of what I love in my work, which will help me reach more people — this, I feel, is my calling. In order to live more gratefully, I am trying to establish daily habits that help me appreciate what I have. It’s easiest for me to tie these to another daily routine or time of day; for example, before I get out of bed in the morning, I try to simply lie awake for a few moments and reflect on all of the opportunities that the day might bring. This is also a much nicer way to wake up than jumping out of bed with your to-do list racing through your mind! With my hectic schedule, living mindfully is a challenge, but I try to remain aware of how I’m feeling and reacting, no matter what’s going on in my business or personal life. But these are all extras; start with just a pair of tennis shoes, and see where they take you. Start slow. “Start with something as simple as walking 15 minutes a day, or 15 minutes three to four times a week, and then build up from there,” Dr. Springgate says. Focus on time, not distance. Pick an activity you love. “Maybe that means participating in gardening, if you enjoy gardening at your house,” Dr. Springgate says. “Or maybe it means participating in some type of sport.” Bring a buddy. Getting active with a friend, co-worker or family member is a great way to build in accountability. “You don’t want to let down that other person,” Dr. Springgate says. LONG-LASTING WEIGHT LOSS Make small changes. It’s important to start gradually with any dietary changes. “I try to encourage people to focus on the notion of making a change that they can maintain,” Dr. Springgate says. Keep your eyes on this week. Dr. Springgate points out that if you lose just one pound per week by focusing on your daily efforts, you’ll be 24 pounds lighter in six months. “We’re not setting an unrealistic goal of ‘I want to lose 10 pounds in two weeks’ — that’s not healthy,” he says. “You may end up doing something that could hurt you and your health.” Don’t be drastic. “I encourage people to maintain a well-rounded diet, and not to wholesale-eliminate an entire food group,” Dr. Springgate says. AVOIDING SMOKING AND PROBLEM DRINKING First, acknowledge the challenge if you’re a smoker. “Tobacco cessation is very difficult, and there are studies that show that nicotine is extremely addictive,” Dr. Springgate says. “It’s one of the most difficult habits that impact health for someone to quit.” Take advantage of local resources. “There are a lot of really helpful tools that are available now that perhaps weren’t available the last time someone tried Dr. Benjamin to quit,” Dr. Springgate says. The Smoking Cessation Trust (1-800-QUIT-NOW), an organization that provides resources, education and support — including smoking Springgate cessation products, and counseling — is a helpful resource for longtime smokers. Set a date to quit. “Maybe it’s Jan. 1 or Jan. 15,” Dr. Springgate says. “Start telling your friends and family. There are many options to make this process more tolerable. Q The first step is to understand why you are smoking and when you feel the need to have a cigarette. was born in South Africa, and I moved to England when I was 11 — where I continued my schooling,” says chef Lawrence Dodds. “Then, I went to culinary “Ischool for four years.” After graduating, he entered the world of fine dining, taking a position at the prestigious Waterside Inn, a three-Michelin-starred restaurant in Bray, England. “I became executive chef at about 27 years old, and I was like, ‘What else is out there?’” he says. “What else” turned out to be food-manufacturing product development — in other words, Dodds began creating fresh, readymade meals and sides, which were sold at clothing and home-goods retailer Marks & Spencer and served aboard some Virgin Atlantic flights. Within a couple of years, Dodds joined Virgin full-time to develop in- flight meals for a number of the international airline’s routes. “That was an unbelievable job,” he says. “I was responsible for all food development onboard all flights out of the UK, inbound from Africa and inbound from India, as well as all kosher food.” Unfortunately, "9/11 took care of that position,” Dodds says. “Food development was then outsourced.” He returned to retail, this time focusing on the customer side. “I was an inspiration chef for Sainsbury’s, meaning that I worked closely with the buyers to bring new product lines to the supermarket,” he says. Dodds might have remained in England, creating readymade meals, but romance intervened. “Whilst I was in London, I met a Metairie girl,” he says. After getting married, the pair backpacked around the world for seven months, planning to buy a house in New Orleans at the close of their journey — in summer 2005. “The last day of our trip was actually in Rio,” Dodds says. “We sat in front of the TV, watching Katrina come in with tickets to New Orleans in our hands.” The couple changed their flights to Baton Rouge and came to Louisiana anyway, buying a house in Mandeville nine days later. Dodds opened a restaurant, The Hungry Forager, where he cooked and taught culinary classes for several years. “In that time, I had two kids, and decided that wasn’t the lifestyle for me and two young kids,” he says. He went back to fine dining, working with chef Scott Boswell at the now-shuttered Stella! Restaurant — where he was almost immediately thrown into the position of chef de cuisine — and at Boswell’s commissary kitchen, The Paint Factory. “I learned a lot,” Dodds says. The chef’s last cooking class at The Hungry Forager included an HR director for Volunteers of America, who mentioned that the organization planned to expand its food services. “When it came around [a year later], she sent me an email,” he says.
