Rosh Hashanah means, “head of the year.” Just as the head controls the body, Rosh Hashanah is seen as the potential for life, blessing and sustenance for the entire year. // On Rosh Hashanah, the birthday of our great-grandparents Adam and Eve, we renew our relationship with G-d. The shofar awakens our hearts and minds to make G-d's mission our mission. // Our actions on Rosh Hashanah set the tone for the year to come. We eat apples dipped in honey, wishing for a good and sweet year, and eat new fruits symbolizing new beginnings. This is reflected in the words that we say during Rosh Hashanah, “May you be inscribed and sealed for a good year.” (See "Checklist" on next page.)

Although the gefilte fish we eat today is usually not cooked in its skin, we continue to enjoy this delicious treat, prepared in a variety of ways, on holidays and throughout the year. Here are some variations of the traditional dish that are sure to delight the guests at your Passover table:
