19 20 Agave & Friends Maguey (Mah-Gay’)—a type of agave—was one of the most cherished plants in ancient Mexican culture. Often used in religious rituals, it was believed to be home to the goddess Mayahuel and was used to make everything from clothing and tools to the sacred beverage pulque (Pool’-Kay). When the Spanish brought alambic pot stills from the Moorish territories with them to the New World, BAM! mezcal, tequila, and sotol were born. NOM stands for Normas Ofcial Mexicana and indicates a government- assigned serial number to the distillery where these spirits originate. Tequila Much like champagne is a type of wine that must come from Champagne, France, tequila is a type of mezcal that must come from around the town of Tequila. The town of Tequila is within the state of Jalisco and by law, tequila must be made from blue weber agave. Urban legend says that due to the early popularity of tequila, the unregulated proliferation of agave farms and over-harvesting of trees as a heat source has now led to the tequila process switching from wood-fred hearths to cleaner gas-fred ovens. This is why tequila is typically cleaner tasting than other types of mezcal. Blancos are unaged, Reposados are aged in barrel between two and twelve months, Anejo are aged between one and three years, and anything older are considered Extra Anejo. Modern production of mezcal usually involves baking the heart of the agave plant in wood-fred, earthen ovens, resulting in layers of deep and smokey favors. These are artisanal, alambic copper-pot distilled spirits made by families that harvest by hand most of these plants in the wild; this is not the stuf preserving worms in Tarantino movies. Some, like the Real Minero spirits, are even distilled in ultra-traditional clay pot-stills, a rare treat even in Mexico. Rum • When America was still a collection of colonies, Americans drank an average of 3.5 gallons of rum per person per year • Pirates today drink far less rum and more Mountain Dew and Red Bull. • Rum is made from molasses. Rhum (with an h) is made from sugar cane juice. • That Black Tot Rum (see below) was distilled mostly in the 1940’s, was rationed to top British naval ofcers until 1970, after which it was drunk exclusively by the British Royal Family for weddings and state occasions. 39 40 Single Distillery Scotch The vast majority of Scotland’s whiskies end up in blends like Dewar’s or Johnnie Walker. Those brands buy the output from diferent distilleries or use the distillate from facilities they own then mix it up to suit their own house style. There’s absolutely nothing wrong with that. The forthcoming sections, however, are distillate from individual sites, with inimitable characters, like solo voices soaring through, rather than the pleasantly homogonous thrum of a well-trained choir. Most of these are single malts, i.e. entirely from malted barley, but a few are even single grain Scotch whiskies, made from other grains like corn, oats, wheat, and/or unmalted barley. The following Scotch whiskies are categorized by region.

SPEYSIDE Once considered a mere subregion of the Highlands, Speyside is now home to about half of all Scotland’s distilleries, including some of the world’s most famous producers such as the Macallan and Glenlivet. They typically make for a rich, smooth, opulent, style that is unpeated.

Peat - noun - def: a brown, soil-like material characteristic of boggy, acid ground, consisting of partly decomposed vegetable matter. Peat was historically burned for heat in certain parts of Scotland and is still used to make some whiskies.

LOWLAND Nearer to Ireland than any other Scotch-producing region, the Lowlands historically produce whiskies that embody a lighter, more ethereal style of whisky. With the booming popularity of richer Speyside whiskies, many Lowland distilleries have since adapted to a fuller style. ISLAY (eye’-luh) First things frst: Islay is an island of the coast of Scotland and an ofcial Scotch-making region. Islay is home to eight distilleries, the majority of which produce Scotches that are famously smokey and peaty in style. They range from the delicate Bunnahabhain to the Octomore series that were crafted to be the smokiest spirits ever. Blended Scotch Blended Scotch Whisky is usually a mix of at least 60% grain whiskies and the rest malt whiskies from diferent Scottish distilleries. They tend to be crowd-pleasing and easy-drinking as well as great values in the world of Scotch. Blended Malt Scotch Whiskies are those that use whisky from many diferent distilleries, but are always 100% malted barley. These tend to be a bit richer and more full-bodied than regular blended Scotches. 51 52 Japanese Whisky In 1918, a young Japanese man from a sake-brewing family named Masataka Taketsuru traveled to Glasgow. There, he fell deeply in love with the land, Scotch whisky, and a young Scottish lass named Jessica Roberts. Defying society and sobriety, they quietly married, returned to Japan, and brought with them the knowledge of Scotch whisky production. Upon returning, Taketsuru found himself under the employ of the beverage company Suntory, which directed him to build Yamazaki—Japan’s frst whisky distillery—in 1923. When his contract expired, Taketsuru struck out on his own, founding the Nikka Whisky Company and Yoichi Distillery in 1934. Best exemplifed by Yamazaki and unlike most single malt producers in Scotland, Japan’s distilleries typically house a variety of stills in diferent shapes & sizes and use diferent distillation techniques, allowing for a wide palette of favors to blend together. Yoichi, however, was Taketsuru’s vision at making something unapologetically Scottish and singular in character. Like a mosquito with dinosaur DNA frozen in sap, it remains a snapshot of Scotch distillation 100 years ago, more “traditional” than many Scotch facilities today. Today, many more independent distilleries have popped up across Japan, including Chichibu, Shinshu Mars, Eigashima, and Fukano. As I type this and glance below at the large selection of ultra-premium and magically high-quality Japanese whiskies—some of which are not even imported to America—I can think of no whisky producing region that has a brighter future.

53 54 Taiwanese Whisky The newest contestants on the world stage of Scotch-like whiskies hail from Taiwan, an island better known for manufacturing computer parts than liquor. Taiwan’s 25 million inhabitants drink, however, about 3 times the amount of Scotch as Americans per capita, and ever since the privatization of the spirits industry in the past ffteen years, industrious Scotch lovers there have set up shop on their native island to make whiskies that have been sweeping awards across the globe, putting Scottish and Japanese distillers on notice.

It wasn’t until 1982, when Scotch enthusiast and heir to the Amrut distillery Neelakanta Jagdale decided to hijack his father’s company, that India saw the birth of its frst truly excellent malt whisky. Since then, Amrut has frmly established itself amongst Scotch fans the world over as being one of the world’s leading single malt whisky-producers. Amrut punches well above its weight class in both favor and value.
