Here’s his signature recipe for one of our favorite pasta dishes.

Ingredients: (Yields 4 Servings) 6 Tbs Unsalted Butter 1.5 Cup Minced Onion 1 Cup Minced Carrot ¼ Cup Chopped Garlic 1 Cup Minced Celery 2 Lb Ground Boar/Pork 1 Lb 80/20 Angus Ground Beef 2 Cups of Chopped Smoked Mushrooms 16 Oz Can Tomato Paste 1.5 Cup Ham-Hock Broth Preperation: MODERN MEDITERRANEAN CUISINE AND (or beef stock) 1.
