Inside the pasta factory, only selected Italian ingredients are used: wheat flour from Emilia Romagna, local eggs from free-range hens, cheeses from local dairies. All the production steps are carefully checked to guarantee the quality of the craftsmanship and respect the resting times of the dough, without the use of any preservatives, except for the cold, to preserve the characteristics unchanged. Monte Fumaiolo is an icon for an entire valley, the Valle del Savio. On the slopes of this hill lies Alfero, a characteristic village of the Tuscan-Romagnolo Apennines, where the Fumaiolo pasta factory is located. The choice of the brand name is a tribute to the region that is so well loved by those who live there.
The establishment is surrounded by greenery, nestled among the beauties of the valley, among forests of beech, oak, fir and chestnut trees, which create the fresh and clean air that gives the Fumaiolo products that genuine and natural flavour that distinguishes them.
The village is crossed by a stream, the Alferello, which, running between boulders and eddies, offers pure and crystalline water, the same as that found in the Fumaiolo recipes. The flavours and aromas of the forest, mushrooms, truffles, chestnuts, game, are the stars of the Fumaiolo recipes, in a gastronomic journey able to satisfy the needs of every palate.

PURE AND CRYSTALLINE WATER History
Fumaiolo was created in Alfero in 1985 as Salumificio del Fumaiolo, by Tiziano Caminati, who decided to make use of the butchering tradition of the Romagna Apennines to offer high quality seasoned meats. Following the passion for authentic cuisine, Salumificio expanded to include Pastificio: in 1999, it startedproducing traditional handmade pasta without any preservatives, as well as piadina flatbreads. A lighter piadina flatbread made with corn oil instead of lard, is packaged in slices.

8 In 2001 they began working with some large-scale retail brands. With the new range available, a range dedicated to quality Food Service was also launched, to put the experience of the Romagna region at the service of catering and the search for the best raw materials. The craftsmanship, the love for the region and the passion for gastronomic tradition have always characterised the business activity, which thanks to the success of the products in 2012 expanded and moved to a new factory equipped with large storage facilities. In 2015, to celebrate thirty years of activity, the company chose a brand with a more fresh and immediate style, in line with its products, simply Fumaiolo. It redesigned the Internet site and strengthened its presence on social networks, collaborating with established chefs and food bloggers and offering customers useful tips and recipes with which to prepare their own specialties.
The company has grown, in fact more than 50 employees now operate in Fumaiolo, yet it is still a family-run business, now led by Alessandro Caminati, and has preserved the craftsmanship in the work.
