    Skirt Steak with Chimichurri Sauce Serves 4 2 pound skirt steak 1- 1½ teaspoon kosher salt ½ teaspoon black pepper ½ cup red wine 2 tablespoon red wine vinegar 2 tablespoons Worcestershire sauce 4 cloves crushed garlic ½ cup extra virgin olive oil 1. Using the tip of a paring knife, make small piercings all over the steak. Sprinkle salt and pepper on both sides of the steaks. Combine red wine, red wine vinegar, Worcestershire sauce, crushed garlic and olive oil in a medium size bowl. 2. Put skirt steak in a gallon size zip lock bag. Pour marinade and seal bag (pressing out air) Marinate inside the refrigerator for 6 hours, or as long as 24 hours. 3. Bring steak out to room temperature an hour before grilling. Preheat the grill or a grill pan (grooved side up) till very hot, about 4 minutes. 4. On medium-high heat, place the steak on the grids of the grill at a 45 degree angle cook undisturbed until grill marks are well defined, about 7-8 minutes. Flip the steak over and continue to cook for 6 minutes or until medium- rare. 5. Transfer steak to a wire rack, cover loosely with foil and let it rest for 5 minutes before slicing on the bias. 6.     Korean Bulgogi Tacos I like to watch Diners Drive Ins and Dives. Its fun to see the different foods being served all around the county and I enjoy the show. I was watching it a few weeks ago and Guy was in Florida at a food truck. The owner of the truck made a Korean BBQ taco that looked really good. It was fresh and the recipe was easy, so I made it for myself. Twice actually. The second time was better when I made it for a group of friends and family on Super Bowl Sunday. The recipe is pretty straightforward but on my second go I made some changes that I think improved upon the original. The first big change was the meat I used. The recipe calls for short rib meat off the bone. This meat is used in Korean BBQ a lot, but it was too tough for me (maybe I just don't know how to cook it). So the second time I made this I used skirt steak instead and it was perfect. I cooked the meat on the BBQ (not the flat top) as I like the char and flavor. If you BBQ, you need your BBQ to be really hot so the meat caramelizes. When you grill the meat, don't mess with it, leave it on the grill and flip it once only. I chose to grill the skirt steak in one piece and slice it after I pulled it off the BBQ. This was easier for me as I was cooking a lot of meat.

    2017 Buckhead Beef RHODE ISLAND CUSTOM CUT / DEMAND OVERVIEW Buckhead Beef is Sysco’s own custom cut, portion control, cut shop. The plant operates Monday thru Friday under USDA inspection. Each day the skilled team at Buckhead Beef RI portion cuts steaks and chops to individual specifications. Sysco Connecticut stocks approximately 50 fresh portion control steak and chop items. These are the core items customers use the most frequently. In addition to these stock items we have the ability to custom cut to order. We refer to CUSTOM CUT / DEMAND SCHEDULE: this as custom cut/demand items. Orders Monday by 11:45 need to be entered and transmitted by for Tuesday delivery noon for the next day delivery. Tuesday by 11:45 for Wednesday Orders are transmitted to Buckhead Beef RI from early morning up to noon. delivery Wednesday by 11:45 The plant cuts the orders throughout the day, each evening Sysco Connecticut for Thursday delivery picks up all items on our refrigerated trucks.
