After searching high and low for the perfect site they settled on the heights of Ribera del Duero, where in poor soils they found old, gnarly Tempranillo bush vines. Cair wines display the hallmark style of finesse and power, found in both Luis Canas and Bodegas Amaren in Rioja. Great balance between the fruit and the oak has seen these wines winning the IWC Ribera del Duero Trophy on occasion. Viticulture In total the winery works 85 hectares of vines, located in the villages of La Aguilera, Quintana del Pidio, Gumiel de Mercado and Moradillo de Roa. At an altitude between 800 to 950 vines are planted on chalky-clay, sandy and gravel soils and have an average age of 20-25 years. Grapes are hand harvested and taken to the winery for an additional sorting. Winemaking The grapes for Cair Cuvé e come from vineyards of 20-25 year old that grow on poor soils. Yields are controlled to a maximum of 4,500 kilos per hectare. Grapes are picked by hand and placed in small plastic crates. Upon entering the winery, bunches undergo a manual selection and then individual grapes are sorted based on their weight. Following this double selection process, they are destemmed and fermented in stainless steel tanks. The wine is aged in used French and American oak barrels for 9 months. It later spends at least 6 months in the bottle to round its aging. Oak Treatment Time: 9 months Type: French and American % wine oaked: 100 % new oak: None Tasting Note Garnet in colour with intense, complex and inviting aromas of ripe berry fruit, preserve, raisins and caramel notes. Dairy nuances over a slightly smoky background and a hint of jam and spice. Easy drinking style but full bodied, fleshy, silky smooth with sweet and polished tannins.
