Lemon Meringue Pie Upside-Down Cake 3 cups granulated sugar 1 1/2 cups unsalted butter, room temperature 1 baked piecrust shell 1/4 cup butter 6 ounces cream cheese, room temperature 1 1/2 cups sugar 2/3 cup firmly packed brown sugar 4 large eggs, room temperature 1/3 cup cornstarch 1 20-oz. can pineapple slices, undrained 2 large egg yolks, room temperature 1/8 teaspoon salt 9 maraschino cherries 1/4 cup half-and-half 4 egg yolks 2 teaspoons vanilla extract 1 3/4 cups milk 2 large eggs, separated 3 cups all-purpose flour 1/2 cup fresh lemon juice 3/4 cup granulated sugar 1 teaspoon salt 3 tablespoons butter 3/4 cup all-purpose flour 1 teaspoon lemon zest 1/8 teaspoon salt Grease and flour a Bundt pan. Beat sugar, butter and 6 egg whites (for Meringue) 1/2 teaspoon baking powder cream cheese with electric mixer until very fluffy and 1/2 teaspoon cream of tartar (for Meringue) pale in color. Add eggs,1 at a time, beating on low 1/2 cup sugar (for Meringue) Melt butter in cast-iron skillet. Spread brown sugar speed. Add egg yolks, half-and-half and vanilla; beat 1/2 teaspoon vanilla extract (for Meringue) evenly over bottom of skillet. Drain pineapple, reserv- on low speed just until blended. Stir together flour ing 1/4 cup juice; set juice aside. Arrange pineapple Whisk together first 3 ingredients in saucepan.
